Refreshing Green Goddess Mocktail

These healthy, refreshing green goddess mocktails with apple, kiwi and lime are super refreshing and good for you.

Ingredients

MOCKTAIL:

  • 2 cups organic pineapple juice
  • ½ cup freshly-squeezed lime juice
  • 2 kiwis, peeled + sliced
  • 1 medium Granny smith apple, sliced (skin on)
  • ¼ cup raw honey
  • Pinch of sea salt
  • Organic ginger beer or sparkling water

GARNISH:

  • Fresh thyme sprigs
  • Sliced Granny smith apples
  • Sliced kiwi
  • Lime wedges

Instructions

TO MAKE THE MOCKTAIL:

  • In a bowl, add the pineapple juice, lemon juice, sliced kiwis and apples, mulling (crushing) everything together until fruit are fully broken down. Add in the honey and salt, mixing everything together until combined.
  • ASSEMBLY: Add crushed ice to glass(es), Add 3-4 Tbsps of mulled kiwi and apples to bottom of glass, followed by ⅓ cup of mocktail liquid mixture until glasses are ½ filled. For additional garnish, sliced kiwis, sliced apples, and lim wedges, and a fresh thyme sprig. Top with ginger beer or sparkling water. Repeat for every serving. 
  • Sip and Enjoy!

Notes

  • STORAGE: Leftovers (without ginger beer) can be stored in the refrigerator in a tightly sealed jar for up to a week. 
  • SWEETENER: Instead of honey, you can always use Agave, maple syrup or create a simple syrup by boiling water with organic cane sugar to sweeten.
  • MAKE AHEAD: You can make the mocktail mixture up to 1 day ahead and refrigerate in an airtight container or jar. The day off, simply slice/chop fruit and assemble.
  • SERVING: To make additional mocktails, simply double or triple ingredients, depending on need.
