Triple Chocolate Protein Overnight Oats

These decadent Triple Chocolate Protein Overnight Oats are a healthy vegan breakfast with chia seeds, protein powder, and agave for sweetness.

Ingredients

OVERNIGHT OATS:

  • 1 cup Thick-cut rolled oats, GF certified
  • 1 cup Almond milk
  • ½ teaspoon chia seeds
  • 1 tablespoon cocoa powder (See Notes!)
  • 1 tablespoon Protein powder, chocolate flavored (I use Chocolate PB combo flavor)
  • 2 Tbsps Agave syrup
  • 2 tsps vanilla extract
  • Pinch of ground cinnamon
  • Pinch of sea salt
  • ¼ cup vegan dark chocolate, melted (See Notes!)

OPTIONAL TOPPINGS:

  • Sliced bananas
  • Vegan Chocolate, roughly chopped

Instructions

TO MAKE OVERNIGHT OATS:

  • Add all ingredients to a medium bowl, stirring until well combined.
  • Tightly cover bowl with plastic wrap and refrigerate overnight (or at least 8 hours).
  • To serve (hot or cold), add oats to a bowl or mason jar and top it with sliced bananas, and chopped chocolate atop, if desired.

Notes

  • STORAGE: Can be stored in the refrigerator for up to 5 days. Perfect for meal prep for the week!
  • SWEETENER: Instead of Agave, you can simply use pure maple syrup or mashed bananas. 
  • MILK: You can use your favorite plant-based milk, whether Soy, Oat, Coconut, Flax milk, etc.
  • MELTED CHOCOLATE: In a small saucepan over low-heat, add ¼ cup vegan chopped  chocolate or chocolate chips and 2 Tbsps Almond milk, whisking constantly until fully melted and smooth. Once melted, remove from heat. Let cool slightly, about a minute or so before adding it to recipe.
  • COCOA POWDER: Instead of organic cocoa powder you can also use cacao powder.
