Delicious Pumpkin French Toast
This Delicious Pumpkin French Toast recipe is perfect for breakfast or a nice brunch. These French Toasts are thin, full of flavor, uses a handful of ingredients, and absolutely easy to make.

- 8-10 slices thick organic bread (You can use Brioche Bread, if preferred!)
- 1 cup Coconut milk, unsweetened (You can use your fave plant-based milk!)
- ½ cup pumpkin puree (Canned 100% pumpkin, NOT pie filling!)
- 4 large organic eggs
- 2 Tbsps pure maple syrup (See Notes!)
- 1 teaspoon vanilla extract
- 1 tablespoon pumpkin spice (See Notes!)
- 1 tablespoon vegan butter (I use Earth's Balance)
Preheat your griddle or non-stick skillet on medium-high heat.
In a medium bowl, whisk together coconut milk, pumpkin puree, eggs, maple syrup, vanilla extract, and pumpkin spice until well combined.
Add butter to griddle (or non-stick skillet) and dip bread slice into egg mixture (allowing a few seconds for it to absorb mixture). Then rotate and coat opposite side.
Transfer to griddle (or non-stick skillet) and cook until golden brown on bottom, then lift, and flip french toast to opposite side and cook until golden brown.
Repeat until all slices are made.
Serve warm with butter and maple syrup. Top with brown sugar bacon if desired.

SWEETENER: If you choose to opt out of pure maple syrup, you can always substitute with Agave as well.
PUMPKIN SPICE: If you don’t have Pumpkin Spice readily available, you can use the following: 2 tsps ground cinnamon, 1 teaspoon ground nutmeg, ½ teaspoon ground ginger, ¼ teaspoon ground cloves, and a pinch of allspice.
TO MAKE BROWN SUGAR CANDIED BACON:
Ingredients:
- 4-5 slices of thick cut bacon or turkey bacon
- ¼ cup maple syrup
- ⅓ cup brown sugar
Directions:
- Place the bacon on a parchment paper lined baking sheet and brush the tops of the bacon with maple syrup and sprinkle on some brown sugar.
- Bake in a pre-heated 400 degree Fahrenheit oven for 10-15 minutes or so, flipping the bacon and brushing the opposite side with maple syrup and sprinkling the brown sugar as well. Bake for another 10-15 minutes or until it is completely caramelized and crispy.
