These Vegan Chewy, Fudge Avocado Walnut Brownies are the perfect sweet treat that is full of chocolatey goodness! You’ll be surprised that it’s made from completely vegan ingredients, little chunks of crunch from the tucked away walnuts, and chewiness/fudge from the creamy avocado. It’s definitely a killer sweet treat to add to your list of must-bakes!
Hey ya’ll! It’s another day of vegan recipes and I’ve been dying to show you guys these delicious brownies. I can still smell the sweet aroma of chocolate as these little beauties are almost finished baking. In this recipe (and any of my other vegan chocolate recipes), I love using my absolute favorite brand of chocolates—-Enjoy Life.
Slowly, I’ve been replacing my little guy’s snacks with this brand’s snacks (all vegan) and surprisingly, the transition has been super easy! He loves them, especially the soft cookies and he’s not a chocolate fan, so you know that it’s GOOD! Haha. Now, this is our new family favorite!
It’s no surprise that I would indulge in this chocolate goodness by adding a few extra chocolate chips. Haha. And trust me, it didn’t disappoint.
Previously, I made these Vegan Fudge Zucchini Brownies with Pistachio, which have the best taste and texture that will automatically keep you on your toes and thrilled after every gooey bite. This recipe will leave you surprised that it is mostly made of vegetables and non-dairy ingredients.
I’ve finally mastered making brownies although I often struggled with it in the beginning. I remember making brownies and having them extremely oily and uneven or totally distorted. Yes, I know. It sounds like a disaster and it was. However, after enough practice and a few fails, I’ve learned the tricks and trades of making the perfect brownie.

Now let’s dig into this recipe!
Preheat the oven to 350 degrees Fahrenheit and add parchment paper to a 8×8 square baking pan (Remember, metal pans are best!).
In a medium bowl, add avocado and using a pastry blenders, cut and puree it until fully broken down. **NOTE: if you don’t have a pastry blender, using a food processor or blender works too!.**
In the bowl of an electric stand mixer, combine maple syrup, coconut oil, pure cane sugar, vanilla extract, and all-purpose flour until well incorporated (It should look like “wet sand”). Then turn the mixer on low and slowly add cocoa powder, pureed avocado, sea salt, and baking soda and continue to mix until well combined.
Using a rubber spatula (much easier to work with), stir in the vegan chocolate chips and chopped walnuts until fully incorporated.
Next—pour the batter into the prepared pan and bake for 45 minutes or until center is fully done. You can always insert a knife or toothpick to test. **NOTE: It should only leave a tiny bit of chocolate on either utensil used to test.**
Remove from the oven and let it cool for about 10-15 minutes before removing brownie square from pan and letting it continue to cool.
In the meantime, add remaining chocolate chips and 1-2 Tbsps of coconut milk to a small pot on low heat and stirring as they melt. Also, finely chopped a handful of walnuts and set aside.
Once fully cooled, cut brownies into squares, brush melted chocolate atop brownies, and sprinkle with chopped walnuts, optional.

I’ve tried avocado brownies (reluctantly), but was surprised at how delicious they were! You really can’t taste the avocado and they’re so moist! Yours look great!
