As August comes to a close and Fall becomes nearer, I’ve been getting myself prepped for a lot of those oatmeal mornings to keep toasty. The thing that I most enjoy about oatmeal is that it’s super easy to make, BUT SO FILLING! OMG. Literally, after eating a good bowl of this stuff, you’ll be set until lunch. Plus, oats are a great source of fiber, too!

As far as oatmeal goes, this Breakfast Peanut Butter Banana Chia Seeds Oats is a great option for your mornings. The awesome thing is that they can be prepped the night before and you even have the option of making overnight oats to ensure that your morning routine runs smoothly.

OK, now back to these oats! I love using blueberries so I wanted to use them in these oats and I truly fell in love with the beautiful purple color that they turned. But trust me, they taste so amazing! Even better than they look. Of course, blueberries and bananas work super well together, but instead of just topping them with plain ole’ slide bananas, I wanted to put a little caramelization on them to add a burst of flavor. And boy was I right! SO so GOOD! Yum.

Since I recently partnered with Purely Elizabeth and got a chance to try out many of their products, I couldn’t resist using their Maple Walnut Probiotic to top things off. This stuff is so delicious and is made from organic maple syrup + walnuts + a dash of cinnamon—all favorites of mine. Haha. The plus? Vegan Blueberry Oatmeal + Caramelized Bananas

Now, let’s dig into this recipe for this bowl of goodness. Shall we?

Simply cook the rolled oats in medium-sized pot along with the unsweetened coconut or almond milk, chia seeds, blueberries, and sea salt on medium-high heat, stirring frequently until it comes to a boil. Reduce heat and let simmer for about 5 minutes.

In the meantime, heat the coconut oil in a skillet on medium-high heat. Add the maple syrup, cinnamon, and vanilla extract and let it bubble and boil for 1-2 minutes. Add bananas and simmer for 3-4 minutes on each side until bananas becomes soft and plump. Remove from heat and set aside until oats are cooked.

Once oats have swelled and cooked through, turn the heat on low and stir in the maple syrup, vanilla extract, ground ginger, and cinnamon. Continue stirring for another minute or so and remove from heat.

To assemble, place oatmeal in serving bowl and top with caramelized bananas and Purely Elizabeth Granola….. That’s it!

Ingredients

Blueberry Oats:

  • 1 cup blueberries, frozen or fresh
  • 1 cup Gluten-free organic rolled oats
  • 2 cups unsweetened coconut milk (You can use Almond or other non-dairy milk)
  • pinch of sea salt
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground ginger
  • 1 Tbsp chia seeds
  • 1/4 cup organic pure maple syrup (Depending on desired sweetness)
  • 1/2 tsp vanilla extract

Caramelized Bananas:

  • 2 medium ripe bananas, sliced
  • 1/4 cup coconut oil
  • 1/4 cup organic pure maple syrup
  • pinch of cinnamon
  • 1/2 tsp vanilla extract

Topping:

  • Purely Elizabeth Granola

Tips & Tricks

**Other great milk options: coconut milk, hemp milk, soy milk, rice milk, flax milk, oat milk, cashew milk etc.
**For Overnight Oats option: simply mix together all ingredients (minus toppings) and add them to a mason jar. Refrigerate overnight or at least 4 hours. The morning of, add toppings over oats and enjoy! Yum.
