Can you believe that the week is officially over already and the weekend has finally come upon us? Crazy, I know. But who else is excited for the weekend? Don’t worry–I’m with you too.
This week has been a bit of a struggle, but that’s a part of life sometimes right? The struggle just has been with getting things to fall into place, but thankfully the change is happening as needed. So, my advice to anyone who has had a bit of a rocky road getting to where you need to—keep going! Don’t give up. Never despise the days of small beginnings, because those small seeds create bigger fruit. Believe me, I know. Orchids + Sweet Tea has been the greatest example of that.
On a lighter note—-has been getting cold wherever you are? Here in NYC, the weather has been rather chilly and is only expected to continue to be so in the coming days. Ahhhh, winter is coming ya’ll. Time to get my Uggs and Winter coat ready! But I’m most excited about the Holiday season and all of the lights and decor that will be around in the stores and on homes. It’s going to be such a beautiful sight. Don’t you agree? Oh and let’s not forget all the Holiday baking that is going to take place, especially in my house. Haha.
OK, so can we talk about these little muffins? I don’t know about you, but my latest favorite sweet treat has been muffins. The funny thing is that muffins weren’t really my thing before my latest baking craze. I’ve always been more of a cupcake, cake, cheesecake, or cookie kind of girl. However, muffins really are an amazing invention! Don’t you agree?
Granted, muffins can seem pretty boring or bland, but it definitely depends of the flavor. Plus, muffins are so versatile and can be paired with something sweet or savory for a nice balance. Recently, I got the awesome opportunity to partner with SunButter and was able to test out their Organic SunButter flavor and No Sugar Added version. Trust me, the taste of sunflower seeds are there! Haha. But definitely not overbearing. AND it’s so creamy and comes in some great flavors, even with a bit of crunch for all the crunchy peanut butter fans!
After much trial and error, experimenting with several flavor and combos, I fell in complete love with using it in this Banana muffin recipe. For some reason, the slight sweetness of the bananas paired so perfectly with the slight salt of the SunButter. Oh, but that’s not all! For November, my next recipe with SunButter is going to be mind-blowing! You just wait and see.
Alright, let’s dig right into this recipe shall we?
Preheat your oven to 350 degrees Fahrenheit and lightly spray a 24-cavity mini cupcake/muffin pan with olive oil spray or a healthy cooking oil spray.
In a large bowl, combine the mashed bananas, SunButter, coconut oil, and almond milk together and mix with a spatula until well combined.
Then stir in the all-purpose flour, oats flour, baking powder, baking soda, coconut sugar, pure maple syrup, cinnamon, vanilla extract, and sea salt and mix until well incorporated! **Try not to over-mix!**
Scoop batter in the prepared mini cupcake/muffin pan (about 3/4-1 full Tbsp each), spreading the batter evenly within each cavity.
Bake for 20-25 minutes, or until a toothpick or knife that is inserted in the middles comes out clean.
Once done, remove muffins from oven and let them cool for a bit (about 10 minutes) before removing them from the cupcake/muffin pan.
To serve, spread a little SunButter on top (if desired) and enjoy.
