It’s finally the weekend and I must say that the days have been going by pretty quickly!
Plus, daylight savings has made the days feel really short (since the sun comes up later and goes down much quicker). Ugh.
That’s the thing that I miss about Summer—more sunlight! Haha.
Now that it’s a lot chillier (especially here in NYC), one pot meals, soups, and stews have become a new favorite in my house.
To kick things off, this Tortellini Soup recipe has taken the lead! Yum!
Like many of you, this week has been pretty exhausting! So much has been happening (especially since it’s the beginning of a new Month) and I can admit that I’m a bit worn out.

But one thing that I’ve learned along Life’s Journey is that once you have the opportunity to take on a new day, you have a purpose to fulfill. So, we can’t waste time being plain ole’ tired.
Granted, self-care is super important, so don’t give your body the TLC it needs, BUT once you’ve refueled, just know that it’s time to get back out there AGAIN.
Too many people are counting on us to be the inspiration. Don’t many people need to see someone else do it, so that they know that they can do it too!
In spite of how hard it seems or how hard it gets, dust yourself off and keep swinging. You’ll knock that thing down eventually.
God always has us go through hardships so that we come out stronger and better than ever before.

Now, let’s grab a spoon and dig right into this recipe, shall we?
Heat a large dutch pot over medium-high heat and add 1 Tbsp of Extra Virgin Olive Oil.
Once heated, add diced red onions and sauté until translucent and fragrant.
Add garlic and dice tomatoes, stirring for about a minute or two.
Season with sea salt, black pepper, dried thyme, dried basil, and chili powder.
Add chicken stock and bring to a boil, stirring occasionally.
Once boiling, add shredded chicken, stirring to incorporate. Reduce heat to low so that it continues to simmer.
Simmer for 25-30 minutes, stirring occasionally.
Now, add tortellini pasta and spinach to soup and simmer for another 10 minutes.
Once fully cooked and pasta is tender, remove from heat and serve with shavings of parmesan cheese on top and a side of Crostini bread.
