This Creamy White Lasagna Soup with ground turkey is rich, cheesy, and comforting—an easy one-pot twist on classic lasagna.

Ingredients

SOUP:

  • 1 tablespoon Extra virgin olive oil
  • 1 lb. organic 94% lean ground turkey (You can use any ground meat preferred)
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 4 Tbsps organic all-purpose flour
  • 2 tsps Italian seasoning (Homemade or store-bought)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 5 cups beef stock or water (You can substitute with chicken or vegetable stock, if desired)
  • 1 ½ cups organic heavy cream
  • 3 Tbsps white cooking wine
  • 8-9 lasagna noodles, roughly broken
  • 1 cup freshly-grated parmesan
  • 1 ½ cups Mozzarella cheese, shredded (Feel free to use any shredded white cheese)
  • 1 cup kale, chopped (You can substitute with spinach, bok choy, collard greens, etc.)

OPTIONAL TOPPING:

  • 1 cup Mozzarella cheese, shredded

Instructions

SEASON THE TURKEY MEAT:

  • In a bowl, add the ground turkey (or whatever ground meat) along with the Italian seasoning, garlic powder, smoked paprika, + salt, mixing everything together until meat is fully coated in seasonings.

SAUTE THE VEGGIES + TURKEY MEAT:

  • In a medium-sized dutch oven pot over medium high-heat, add the olive oil. Once heated, add the minced garlic and chopped onions, and sauté until translucent + fragrant, about 1-2 minutes. Add the seasoned ground turkey and stir until the meat begins to change color a bit. Continue to stir (and breakdown the meat with a wooden spoon or a fork) to ensure that it cooks through well and becomes small pieces. Reduce the heat to low and let it simmer for 5-6 minutes. NOTE: If needed, slightly drain any liquids once meat has completely changed from pink to light brown.
  •  Add the flour and continue to stir until combined and everything becomes a bit thick.

TO MAKE THE SOUP:

  • Add in the beef stock (or water) and white cooking wine, stirring frequently to avoid lumping until thickened. Add in the chopped kale, stirring to combine. Let everything simmer for about 10-15 minutes.
  • Now, add in the heavy cream and broken lasagna noodles, stirring to combine. Let everything simmer for another 5-9 minutes or until the lasagna noodles are fully cooked through and tender.
  • Add in the grated mozzarella and parmesan, stirring until cheese has melted and the soup become creamy. Simmer for another 1-2 minutes.
  • Remove from heat and serve immediately into oven-safe bowl(s) ----if following this step. Otherwise, remove from heat and serve immediately into prepared bowl(s) and jump to last step!

OPTIONAL: BROIL FOR NICE FINISH

  • Once in oven-safe bowl(s) and place them onto a baking sheet to avoid any "bubbling over". Top soup with remaining 1 cup of shredded Mozzarella and bake on 400 degrees Fahrenheit for 5-6 minutes or until cheese has fully melted, the top is browned slightly, and the soup is bubbly at the sides. 
  • Remove from oven and serve with your favorite side like bread or salad or garlic bread, if desired. For added texture and flavor, top with things like croutons or chopped candied bacon.
