In a medium-sized dutch oven pot over medium high-heat, add the olive oil. Once heated, add the minced garlic and chopped onions, and sauté until translucent + fragrant, about 1-2 minutes. Add the seasoned ground turkey and stir until the meat begins to change color a bit. Continue to stir (and breakdown the meat with a wooden spoon or a fork) to ensure that it cooks through well and becomes small pieces. Reduce the heat to low and let it simmer for 5-6 minutes. NOTE: If needed, slightly drain any liquids once meat has completely changed from pink to light brown.
Add the flour and continue to stir until combined and everything becomes a bit thick.
TO MAKE THE SOUP:
Add in the beef stock (or water) and white cooking wine, stirring frequently to avoid lumping until thickened. Add in the chopped kale, stirring to combine. Let everything simmer for about 10-15 minutes.
