These Vegan Orange Belgian Waffles are just too good to pass up! Each waffle is fluffy, thick, and airy; comes bursting with orange flavor and slight sweetness that gives this breakfast (or brunch) dish the perfect taste. Super easy to make and completely vegan.

It’s a brand new week and the countdown til Spring begins officially this week! Yay! After much cold weather these past few months, I couldn’t be any happier for a bit more warmth, although I know that the rainy months are ahead—hence the saying, ‘April showers bring May flowers’.

More importantly, I’m super excited about getting started on my Spring baking! And yes—it’s a whole ‘thing’ in the baking community! Haha.

Looking back to last year’s Spring baking, I must say that this year will be all about new flavors, a lot of twists, and a bit of complexity (when it comes to certain recipes or at least the execution/food styling).

I’m so happy to see my growth over the past year and I can’t wait to see how much I grow in the coming year! These past few days have definitely been about being grateful for how far I’ve come in general (Life and all!) and I’m encouraging you to do the same. Granted, we might not be where we want to be, but more times than not—we aren’t where we were.

The Best Vegan Orange Belgian Waffles

Now, let’s dig right into this recipe, shall we?

  1. Preheat your waffle maker to desired setting–medium-high heat worked for me!
  2. Whisk together the organic all-purpose flour, whole wheat pastry flour, cinnamon, baking powder, and sea salt in a large bowl and set aside.
  3. Add the coconut oil, Almond milk, vanilla extract, maple syrup, apple cider vinegar, and freshly squeezed orange juice in the center of the dry mixture (after creating a well) and stir together well (using a spatula) until fully incorporated. Now, let the batter sit for 2-3 minutes while it slightly thickens and rises, which means that the ingredients have activated.
  4. Next, spoon batter into your waffle maker (1/4 cup approximately) and cook according to your waffle iron’s instructions.
  5. Once each waffle completes, add to a baking sheet and place them in the oven on the lowest setting (to keep them warm). Repeat until all waffles are made.
  6. To serve–stack waffles (whole or cut), add sliced oranges and/or strawberries, and drizzle with maple syrup.
  7. Bon appetite!

Ingredients

  • 2 cups organic all-purpose flour
  • 1 cup organic whole wheat pastry flour

Tips & Tricks

NOTE: If you’d prefer to make 1/2 the amount of Belgian waffles, feel free to shave each measurement down in half for each ingredient.
**For standard waffles (non-Belgian)—this will make more than 6-8 waffles for this recipe.**
