Happy Monday, ya’ll! We’re officially in the final days of October and it’s finally time for the Holidays and all the tasty goodness that it entails! Lately,  I’ve been reflecting on my year and I must say that it has been such a learning curve!

There have been so many challenges and wins this year that the balance has allowed much growth, discovery, and change in me, which I’m produce to say has been awesome, yet bitter/sweet. Now, with the last 2 months ahead, I am super excited to end the year even stronger and with more milestones.

To start, I’ve been picked to join a Cookie Contest on Pinterest through a company and I couldn’t be more honored. I’ve been conjuring up an awesome recipe for this and am happy with the results of what I came up with. Oh and yes—it’s H O L I D A Y written all over it! Haha.

And let’s not forget about Thanksgiving which is coming up so quickly! I’ve been putting together my recipes for November and I can’t contain myself! I have so many new flavors, techniques, and textures that I plan on trying and I hop that you guys enjoy!

So, back to this recipe—-these deconstructed brownies are made with SunButter, which is the same type of butter that I made these Vegan Banana Oatmeal SunButter Mini MuffinsOK, now let’s talk about SunButter. If you’ve been following this blog for some time, then you’ll know that I am a HUGE believer in using the best, most quality ingredients, which is the key to eating healthier. Like many of my faves and go-to’s like Bob Red Mill’s, Sugar in the Raw, Enjoy Life Products, Purely Elizabeth, Justin’s, and more; SunButter is one of great quality, has no GMOs, vegan, gluten-free, and so GOOD! Plus, SunButter is free from the top 8 allergens: peanuts, tree nuts, soy, milk, eggs, wheat, fish, and crustacean shellfish.

Recently, I got the awesome opportunity to partner with SunButter and was able to test out their Organic SunButter flavor and No Sugar Added version. Trust me, the taste of sunflower seeds are there! Haha. But definitely not overbearing. AND it’s so creamy and comes in some great flavors, even with a bit of crunch for all the crunchy peanut butter fans!

Of course, I had to pair these deconstructed brownies with a few scoops of my favorite vegan ice cream—Cappuccino (Cashew Milk flavor) by So Delicious. Just PERFECT!

And if you’re into chocolate—then this Healthy Chocolate Hazelnut Granola w/ Cranberries would be a great option for a snack or even a quick choice for breakfast along with your favorite non-dairy milk!

To keep things chocolate-y and chocolate chip indulged, I’ve included these Easy Chocolate Chip Cookie Dough Bites which are the perfect sweet little snack to satisfy in between cravings. Completely dairy-free and Vegan, these cookie dough bites can be whipped together quickly with just 9-ingredients and in 15 minutes total! Yum!

Ok, let’s dig right into this recipe, shall we?

Preheat oven to 350 degrees Fahrenheit and line a 8×8 square baking pan with parchment paper.

In the bowl of an electric stand mixer on medium-high speed, cream together the organic pure cane sugar, SunButter, and vanilla extract, for 1-2 minutes until smooth.

In a separate bowl, whisk together the oat flour, rolled oats, baking powder, and sea salt.

Now, turn the mixer’s speed on low and add the oat flour, mixing for 1 minute. Slowly, add the Almond milk and continue mixing on low-speed for a few more seconds. Turn off mixer and fold in chocolate chips using a rubber spatula. **NOTE: Dough will look moist, but should form large mounds when gently pressed together.**

Add the dough to the prepared baking pan and gently press it down until evenly spread in the baking pan. Sprinkle a few chocolate chips on top and gently press them down into dough, if desired.

Bake for 25 minutes or until edges are golden brown and crisp. **NOTE: Center of brownie should come out clean when tested with a toothpick.**

Let cool completely in the pan (about 20 minutes or so) before removing brownies. To remove, gently lift the side of parchment paper and roughly cut into small chunks.

Serve with your favorite vegan ice cream or eat each little bite with a glass of non-dairy milk.

Ingredients

  • 1 1/4 cup Gluten-free Rolled Oats, ground into flour (I used Bob's Red Mill; See Notes!)
  • 1/4 cup Gluten-free Rolled Oats (I used Bob's Red Mill; See Notes!)
  • 1 cup organic pure cane sugar
  • 3/4 cups SunButter, No Sugar Added
  • 2 tsps vanilla extract
  • 1 1/2 tsps baking powder
  • 1/4 tsp sea salt
  • 1/4 cup Almond milk, unsweetened + 2 Tbsps
  • 1/2 cup vegan chocolate chips (I used the Enjoy Life brand)

Tips & Tricks

To Make Oats Flour: finely grind rolled oats in a food processor or blender until it becomes like flour. Continue to use in recipe as instructed.
For Storage: Brownies can be stored covered in the baking pan OR refrigerator for optimal freshness for up to 3-5 days, re-warming slightly when serving.
