OK, so Ice Cream is one of my absolute faves! While I once enjoyed a nice scoop of Haagen Dazs or Ben + Jerry’s Ice Cream, I now opt for a generous scoop of a dairy-free version.

My fellow Southerners know that we add dairy to EVERYTHING! Cheese, Milk, Whipped Cream, Ice Cream, Cream Cheese, you name it—it’s dairy! Haha.
While I can admit that my journey hasn’t been PERFECT (I may have given in a handful of times), it definitely has IMPROVED a ton! Honestly, I think that creating fun, new ways of eating my faves without the dairy has definitely helped me the most.
So, of course, I’m hoping that my vegan, sprinkles of gluten-free, + dairy-free recipes are helping you!
The interesting thing about this recipe is that I haven’t really indulged in vegan ice cream much until recently. It’s actually usually considered ‘Nice Cream’ and the base is frozen bananas. I know. Bananas are super versatile. Yup, so vegan ice cream can be either creamy (when using coconut milk as the base) or more ‘frozen-like’ when using bananas. Believe me, either way—it’s so GOOD!

When it comes to Sunflower Seeds, they are rich in healthy fats and include several vitamins and nutrients. They are especially high in Vitamin E (an incredible antioxidant) and selenium. Together, both work to help protect the body’s cells against free radical damage.

OK, so if you’ve been following my SunButter recipes, then you’ll know that there are a variety of flavors. While I’ve had the pleasure of trying out all of the flavors and textures added, I must let you know that using a specific version for this nice cream is a matter of preference.
Because SunButter has a different texture and “oiliness” than other butters, it’s so important to use the right amount AND the right version, especially for certain desserts. However, after much testing, I’ve realized that the SunButter Creamy version worked the BEST with this recipe, like many other recipes that I’ve done! Personally, the creamy version is just that—smooth and creamy and it mimics most popular butters (in terms of consistency) the best. Granted, you can also use their Organic, No-Sugar Added, or Natural versions. In addition, you can also use their Natural Crunch version, if you’re into enjoying a little crunch in every bite.
Now, let’s dig right into this recipe–-shall we?
Place the frozen bananas and Coconut milk in a food processor and pulse for a few seconds (about 10 seconds) until somewhat smooth. **NOTE: DO NOT OVER-PULSE!**
Add the SunButter, sea salt, and maple syrup and continue to pulse for another few seconds—about 5-6 seconds, until smooth.
Transfer to a loaf pan (Metal or Ceramic) and let it freeze for 4-6 hours. Once ready to serve, remove from the freezer and let it sit at room temperature for at least 30 minutes. Scoop in your favorite bowl, cone, or both. Top with vegan chocolate chips, if desired and enjoy!
