These Spicy Buffalo Chicken Salad Kale Wraps are filled with so much flavor. Packed with shredded chicken breast that is glazed with a spicy buffalo sauce, along with brown rice, bell peppers, onions, jalapeños, and tomatoes; these kale wraps are the best healthy and easy meal on any given day. Dip them in your favorite dipping sauce and bon appetite! Vegan option available.

Whelp, the weekend is coming to a close and I’m pretty sad about that! Haha.

However, it is now the start of a new week and October is right around the corner, so hey! AmI the only one who’s utterly surprised at how quickly we’ve come into the 4th quarter of the year? Seriously, the holiday season is on the horizon and I’ve even begun seeing Christmas decor starting to fill the store shelves. It’s so crazy BUT I’m excited! Just have to get my savings in order to really gather all the gifts!

Anyway, unlike my usual weekend routine, this weekend has been a rather quiet one for me. I chose to get some rest and only get specific work done. No recipes this weekend—I know. It’s so foreign to me too. And if you’ve been following my blog then you know that I’m always ecstatic for the weekend so that I can explore flavors and whip together a few recipes.

But sometimes your body just demands that you rest up, so I listened. And this bit of rest was good. I’m definitely ready to take on this week ahead, full force. Who’s with me?

Spicy Buffalo Chicken Salad Kale Wraps

Ok, so let’s talk about these Kale wraps. I’ve actually had this recipe in my saved queue for sometime because I was a little hesitant at how photogenic they actually were. While this was an AMAZINGLY TASTY recipe, I really am bummed that Kale isn’t such a great veggie to capture in a photo. They just look so rough around the edges, right? Haha.

Well, I’ve decided to take the chance and I hope that you thoroughly enjoy this recipe. Trust me, they taste so good! Plus, I’ve tried Lettuce Wraps which are the new thing, however, using Kale just adds a nice flavor and texture to the other ingredients. As you know Kale has a slight spiciness to them, but it also tastes refreshing. It’s just an awesome balance.

Of course, for my Vegan eaters or Vegetarians, you can always substitute the chicken for beans or another meat substitute (Check out our Awesome Meat Substitutions article for a few ideas!) instead!

Now, let’s sink our teeth right into these Kale wraps, shall we?

Begin by adding shredded chicken breast to a medium saucepan, buffalo sauce, honey, salt + black pepper (to taste) and a Tbsp of BBQ sauce, stirring everything together on medium-high heat, until fully coated. Remove from heat.

To Assemble: Take one kale leaf (laying it flat + open) and top it with 1-2 Tbsps of brown rice, buffalo chicken, diced onions, bell peppers, jalapeños, and tomatoes. Repeat for each kale wrap until all ingredients are used. Drizzle your favorite sauce or dressing atop assembled kale wrap and use remaining sauce or dressing as dip, if desired.

Ingredients

  • 2 cups shredded cooked chicken breast (Substitute w/ Beans, Tofu, or other Meat Alternative; See notes!)
  • 1 cup buffalo wing sauce
  • 1/4 cup pure honey (Substitute w/ Pure Maple Syrup for Vegan Option)
  • 1 Tbsp BBQ Sauce, homemade or store-bought
  • pinch of sea salt + black pepper, to taste
  • 6 large Kale leaves, rinsed + patted dry
  • 1 cup cooked brown rice
  • 1/2 red onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 jalapeño, diced
  • 2 medium tomatoes, diced
  • Your favorite dipping sauce or dressing (I used Annie's Green Goddess Vegan Dressing)

Tips & Tricks

Homemade Spicy BBQ Sauce: 15 oz. can of tomato sauce, 3/4 cups water, 1/4 cup balsamic vinegar, 2 Tbsps sriracha sauce, 2 tsps ground mustard, 1/3 cup agave syrup, 2 Tbsps pure maple syrup, 1 tsp sea salt, 1 tsp onion powder, 1 Tbsp red pepper flakes, and 1 tsp smoked paprika.
**Whip together: Place all ingredients in a medium saucepan on medium-high heat and whisk together until it begins to boil. Reduce heat to low-medium and let everything simmer for about 15 minutes or so, stirring occasionally. Once thickened enough to desired consistency, remove from heat and let cool. Set aside until ready to use or store remainder in an airtight container and refrigerate for up to 2 weeks.**
