Personally, my childhood favorites were things that came loaded with peanut butter (let’s say Nutter Butters and even Nutter Bars despite the chocolate). However, since making my own homemade cookies, I’ve become a HUGE fan of chocolate chip flavors, especially since I love using Enjoy Life Food’s Vegan Mini Chocolate Chip Cookies.

In all honesty, these Oversized Crinkled Chocolate Chip Butterscotch Cookies have been one of the favorites by our readers! I’m guessing that they LOVE the Chocolate Chip + Butterscotch combo as much as I did! Haha.
And if you’re into something ridiculously over the top, then these Gooey Marshmallow Chocolate Chip Cookies are right up your alley! There’s not much that can be said about these. They are extra thick, but soft, and just perfection in one single bite!
More importantly, we do have a recipe for those who follow a Vegan diet! These Chunky Vegan Chocolate Chip + Pretzel Cookies are nothing short of amazing! They provide a great balance of salty + sweet from the marrying of the chocolate chips and pretzel pieces. In addition, the use of applesauce (Yes, you read it right!) gives these cookies a nice chewiness, softness, + gooeyness that will leave you wanting just one more cookie (or maybe 2 or 3! Haha!).
OK, now back to this recipe—-I truly enjoyed making these cookie sandwiches, especially since there wasn’t any refrigeration required for the batter. I know. Crazy, right?
Whelp, for one, by not allowing the batter to refrigerate, I was able to accomplish a puffier cookie, which allows it to look a lot more like a whoopie pie, but more importantly, gives me an extra bite. Haha.
Secondly, I enjoyed using Wilton’s NEW naturally flavored icing! In between these two lovely cookies, I chose to use Wilton’s NEW naturally flavored Warm Vanilla Icing and then sprinkled their delicious naturally flavored Chocolate Jimmies. Believe me—this combination made EVERYTHING amazing!
Usually, I try to make my frostings and fillings from scratch because I like to keep things healthy and what not. However, Wilton’s NEW naturally flavored icing makes things comforting when enjoying a shortcut to any sweet recipe, instead of making everything yourself! What’s so great about this line anyway?
While this list seems short, believe me—it gives this icing it’s sinful richness and I can admit that I’ve over-indulged in a few spoonfuls of this goodness while adding it to these chewy little sandwiches. Haha.
Preheat your oven to 350 degrees Fahrenheit and line 2 baking sheets with parchment paper and set aside.
In the bowl of an electric stand mixer (attached with a paddle), beat together the butter and both sugars until fluffy and light, about 2 minutes.
Add the egg, vanilla, and sea salt and beat on medium speed, mixing until combined well.
Remove from mixer and fold in flour, baking soda, and rolled oats using a rubber spatula. Once fully combined, gently fold in mini chocolate chips.
Scoop 1 Tbsp of cookie dough (or use a cookie dough scoop) and roll it into a nice ball, placing it onto the lined cookie sheet. Repeat until all dough is used. NOTE: Ensure that you leave at least 1-inch of space in between each cookie dough.
Bake them for 11-12 minutes, until edges and bottoms are golden brown. NOTE: At first, cookies will appear to be undone, however, they will harden and form better once fully cooled.
Once removed from the oven, allow them to cool for 10-15 minutes, before transferring them to a cooling rack to cool completely (about 30 minutes).
To assemble cookies—pipe 2-3 Tbsps of Wilton’s naturally flavored Warm Vanilla icing on one side of one cookie and place the other cookie atop. Next, sprinkle their Naturally Flavored Chocolate Jimmies and/or NaturallyFlavored Vanilla Jimmies around the edges of the frosting in the middle or to make things easier: place sprinkles in a bowl and lightly roll the edges of the cookies in them! Repeat until all cookies are assembled.
