No-Bake Vegan Superfood Chocolate (Cacao) Cheesecake Bites

So we’re kicking off the start of the new week with such a delicious recipe! I couldn’t be more excited to share another recipe in collaboration with Navitas Organics.

If you’ve been an avid follower of Orchids + Sweet Tea, then you’re aware that I chose my collaborations with brands VERY carefully, because I want to ensure that they represent this blog’s mission in every way possible.

Honestly, I’d rather turn down a company that doesn’t coincide with what I stand for and of course I often already use that company’s product so that I can ensure that you’ll love it too.

With that being said, I’m a huge fan of Navitas Organics and often use so much of their products. Navitas Organics has so many great options when it comes to eating healthy and this powder is just ONE of the amazing flavors available.

In case you aren’t too familiar, Navitas Organics has an array of options which include Cacao, Goji Berries, Maca Powder, Superfood blends, Turmeric, Chia Seeds, Mulberry Berries, and so much!

In addition, they have Latte mixes, Powder Boosts, Power Snacks, and more.

I actually featured one of their Latte mixes (Cacao Latte) in this Chocolate Chip + Coconut No-Bake Energy Bites recipe.

The Navitas Organics’ Cacao Latte is super easy to make. Simply add one of their convenient packets to boiling water (or milk for a nice creaminess) and wallah!

For additional flavor and creaminess as well, you can add a non-dairy creamer; Just perfect and packed with a ton of nutrients!

What Did I use in These Overnight Oats Exactly?

Cacao Antioxidant Blend (includes Goji + Acai)

Coconut Cream

Maple Syrup

Raw Cashews

Vanilla

Coconut Oil

Sea Salt

Caco Powder

Dates

Walnuts

Lemon Juice

What is Cacao really? Cacao vs. Cocoa.

OK, so can we talk about Cacao for a sec? Did you know that Cacao AND Cocoa are the same thing?

I know. Insane. I was totally confused about this for a long time and honestly assumed that once was healthier than the other. However, it’s come to be determined that they are just used interchangeably.

Chocolate is actually made from Cacao beans (or seeds). It’s said that companies who use the term ‘Cacao’ are referring to the beans, pods, or ground up version of the beans. However, the term Cocoa is often referred to as the powdered version of it all (which is formed after the fat is pressed out of the bean).

Of course there’s a whole process that happens and you can find out more about that here.

However, be mindful that since Cocoa has the fat removed for it to be powder-like, it does make Cacao a greater option in terms of health benefits.

Cacao has a host of health benefits which include: antioxidant properties, heart-protective and anti-cancer properties, contains iron and tryptophan (which is an amino acid that helps the body make serotonin—a relaxing chemical).

So of course, it’s always best to go with a brand of Cacao that contains those nutrients and are premium to ensure that your body actually receives all of those boosters. Navitas Organics’ version of their Cacao, Cacao + Antioxidant Blend or Cacao Latte not only does that, but they are so delicious as well! You can always purchase it on their site or through a large retailer like Amazon.

Why Cashews?

As we know, Cashews have a buttery, sweet and salty taste to them and can be incorporated in so many recipes. But do you know just how many vitamins and minerals are incorporated into cashews?

Although Cashews are lowest in fiber and highest in carbohydrates among other nuts, they come jam-packed with vitamins, minerals, and antioxidants, some of which include: Vitamins E, K, and B-6, Copper, Phosphorous, Zinc, Magnesium, Iron, and many others.

Research also shows that Cashews aide greatly in the following:

Now let’s dig right into this recipe, shall we?

For the Cacao Crust:

Prepare a 12-cavity cupcake pan with cupcake liners and set aside.

Add the dates to a food processor and pulse until small bits remain or it forms into a ball. Remove from food processor and set aside.

Add walnuts, cacao, and sea salt to the food processor and process until it becomes almost “meal-like” or into small bits. Now add dates to the processed walnuts mixture and pulse until a loose dough forms. NOTE: It may look “wet-like” but that’s fine, as long as your fingers can press it down successfully. If too sticky, add more walnuts and pulse again.

Carefully, add 1 Tbsp of crust mixture to each cupcake liner and gently press down with the back of a spoon or your fingers. Repeat until all crust mixture is used.

Set in the freezer until ready to use.

For the Chocolate (Cacao) Filling:

Add the cashews, coconut oil, coconut cream, maple syrup, vanilla extract, cacao powder, and lemon juice to a food processor and process until smooth. NOTE: Texture should be thick + creamy, with no cashew bits showing.

Remove the crust from the freezer and add about 1 1/2 Tbsps of chocolate layer atop the crust, spreading evenly within each cupcake liner. Repeat until all batter is used and return to freezer to set.

For the Chocolate Glaze:

In a small pot on low heat, add chocolate chips and milk, whisking constantly until full melted and smooth. Once melted, remove from heat. Let cool slightly, about a minute or so.

Once done, add 1 Tbsp of chocolate glaze atop each cheesecake (which should be slightly “set”) and evenly spread it within each cupcake liner. Repeat until all glaze has been used and return to freezer to fully set, about 3 hours or overnight.

Once ready to serve, remove them from the freezer (30 minutes prior) and place them in the refrigerator, allowing them to defrost.

To serve, remove each cheesecake bite from their liners, top with fresh strawberry (optional) and enjoy!

Bon Appetit!

Tips & Tricks

STORAGE: Leftover Cheesecakes can be stored (tightly wrapped) in the refrigerator for up to 5 days. For best results, keep cheesecakes in the freezer until the night before you’re ready to serve. Defrost by refrigerating.
COCONUT CREAM: For the canned Coconut Milk, I love to use Thai Kitchen Coconut Cream, which is perfect for recipes that require a more creamy base than the regular canned coconut milk.
NAVITAS ORGANICS: For this Cheesecake, I used Navitas Organics’ Cacaco + Antioxidant Blend, Cacao Powder, Cashew Nuts
SOAKED CASHEWS: To best soak cashews, add 1 cup of cashews to a bowl or measuring cup and cover with cold water, sealing the top with plastic wrap and leaving it out (at room temp.) overnight. When ready to use, drain and rinse.
DATES: To soak, add dates to a small bowl with fresh water for 10 minutes or so. This softens it and makes hydrates them.
SWEETENER: If you choose to opt out of pure maple syrup, you can always substitute with Agave as well.
