What is Avocado Toast?

Basically, avocado toast is an open sandwich that consists of some sort of toasted bread that comes topped with mashed avocado and a few pinches of seasonings. Of course, in recent times, avocado toast has been re-invented and has included many other toppings in addition to mashed avocados, which has made it a true morning staple.

Tips + Hacks for the Perfect Fried Eggs

Preheat the Pan Properly

  • Start with a dry pan over medium-low heat for 1–2 minutes. You want it hot enough that a drop of water sizzles gently, but not so hot that the fat smokes immediately.
  • A moderate temperature lets the whites set without overcooking the edges.

Use the Right Fat

  • Butter gives rich flavor and helps achieve slightly crispy edges—but watch for browning too much.
  • Oil (neutral oils like canola or grapeseed) withstands higher heat, producing crispier whites.
  • For extra flavor, try a combo: a pat of butter splashed with a drizzle of oil.

Crack Into a Small Bowl First

  • Cracking directly into the pan risks broken yolks or shell shards.
  • Pouring from a bowl lets you check for shells and gently slip the egg into the fat, keeping whites intact.

Tilt + Baste

  • Tilt the pan slightly so fat pools on one side.
  • Using a spoon, baste the tops of the whites (and edges of the yolk) with hot fat—this cooks the top gently without flipping.

Steam-Finish for Sunny-Side Up

  • After the whites are mostly set, add 1–2 teaspoon of water alongside the egg and immediately cover with a lid.
  • The steam cooks the surface of the white without turning, leaving a runny yolk and firm edges.

  • For over-easy/medium: once the whites are set but yolk still jiggles, gently slide a thin spatula under the egg, then flip in one quick motion.
  • Cook just 10–15 seconds for over-easy, 30–45 seconds for over-medium.

  • A stainless-steel or silicone ring keeps the whites contained, making neat, uniform rounds—ideal for breakfast sandwiches.

Season Early and Finish Smart

  • Sprinkle salt right after cracking so it penetrates the white.
  • Add a pinch of freshly ground pepper or finishing salt just before serving for texture and pop.

Nonstick vs. Stainless Steel

  • Nonstick pans are most forgiving for beginners—eggs release easily.
  • Well-seasoned stainless steel gives superior browning if you master temperature control.

How to Make Morning Glory Pesto Egg Avocado Toast

In just a few short steps, you’ll have the most delicious breakfast toast —- Morning Glory Pesto Egg Avocado Toast that’ll satisfy each morning craving possible. Here’s how to make everything:

  • First, sauté the chickpeas in a skillet over the stovetop along with my On Everything All-Purpose Blend, hot honey, and a few other ingredients. Set aside.
  • Then in a bowl, add the avocados (by removing the flesh from their pits and skin) along with lemon juice, salt, and black pepper---mixing everything together until smooth and combined. Chunks are definitely OK!
  • Whip together your fried pesto eggs and set aside.
  • Toast your bread and assemble it all together for the perfect bite!

Ingredients

For the best everything avocado toast, it’s all about the toppings!

TOAST:

  • Toasted bread. I love using rustic bread such as sourdough, however, any type of bread works just fine----- I love Dave's Killer bread for regular sliced bread.
  • Avocados. I like to use organic Haas avocados, pitted + mashed (You can also use Guacamole as a sub)
  • Lime or lemon. Freshly-squeezed.
  • Pinch of sea salt + black pepper.

TOPPINGS:

  • Olive oil. Feel free to use your favorite high-quality EVOO. My fave tried and trusted brands are Brightland or California Olive Ranch. You can substitute with avocado oil, grapeseed oil, etc.
  • Eggs. This recipe uses 2 large eggs. I always choose organic! You can make them slightly runny or well firm.
  • Herbs + Seasonings. A great addition of flavor. You can purchase my On Everything All-Purpose Blend for the greatest ease and authentic flavor.
  • Chickpeas. I like to use canned garbanzo beans for ease—just drain + rinse. Though you could also cook dried beans.
  • Hot honey. The primary sweetener with a spicy element for the sauce, contributing a beautiful balance. You can make this from scratch or use my faves: Mike's Hot Honey or Nature Nate's for a premade versions). Lately, I've also thoroughly enjoy Momofuku's hot honey chili crunch.
  • Smoked paprika. Enhances the smoky flavor in the sauce.
  • Pesto sauce. You can make your own from scratch or use a high-quality store-bought version like Whole Foods or Rao's.

For those of you who aren’t aware, another name for Chickpeas are Garbanzo Beans. Despite the most recent craze, chickpeas have been around for thousand of years and originate from the Middle East.

Chickpeas have such a great texture and nutty flavor, which allows them to successfully pair well with a lot of other ingredients, especially in vegan and/or vegetarian recipes.

When it comes to the health benefits of Chickpea, here a few awesome reasons why you should probably add this simple ingredient to your diet more often:

  • Packed with Nutrients + have a moderate amount of calories!
  • Rich in Plant-Based Proteins!
  • Support Blood Sugar Control.
  • Full of Fiber + might aide digestion.
  • May protect against Chronic Diseases (such as heart Disease, Cancer, Diabetes, etc.)

How To Make Homemade Hot Honey Sauce?

Heat a medium 10-inch skillet over medium-high heat. Melt the butter and sauté the minced garlic until fragrant (about 1-2 minutes). Add honey, cayenne pepper, chili powder, smoked paprika, garlic powder, red pepper flakes, and a pinch of salt. Stir until the sauce becomes smooth and thick. Can I Make This Hot Honey Chickpeas Less Spicy?

Absolutely-- if you're not a fan of spice or if you're preparing this avocado toast for little ones who prefer milder flavors, don't worry—I've got you covered. You can easily adjust or omit the spicy ingredients like cayenne pepper, red pepper flakes, and chili powder when whipping together the hot honey sauce from scratch to make it perfect for everyone at the table.

Tips to Making the Perfect Avocado Toast

When it comes to making avocado toast, there are just a few small steps that you can take to ensure that it comes out perfectly every time.

PICK THE BEST AVOCADOS FROM THE START

Picking the best avocados is by far the most important part of this entire toast. I love using Hass avocados, however, you can use other types. Always make sure that they are fully ripe but over-ripe (meaning it's extremely soft to the touch). For the best check---always look for avocados that have a good squeeze and isn't too hard or too mushy/soft.

Also, once open, if you find that there are brown bits or sections, be sure to cut those out and discard of them before you mash everything.

YOUR BREAD MATTERS

Again, I mention the best types of bread when making avocado toast, however, understanding just how important it is to choose the right bread is a must! I always like using thin sliced bread that hold up well, which is why I often opt for rustic bread. You can read further down as I go more into this. In addition, be sure to always toast your bread for a nice crunch and a strong foundation to hold your toppings.

MASHED AVOCADO IS BEST

I know that avocado toast has it's many variations these days, however, I've come to conclude that mashed avocado on toast is a lot better (and easier to eat) than sliced avocado. Granted, you can always switch things up based on preference, but if I'm honest, I found that having my avocados mashed allowed for more real estate when adding additional toppings.

Ingredients

PESTO EGGS:

HOT HONEY CHICKPEAS:

  • 1 (15 oz.) can organic chickpeas, drained + rinsed
  • 1 tablespoon Extra virgin olive oil
  • 1 cup hot honey, store-bought or homemade  (See Post details for homemade)
  • 1 teaspoon On Everything All-Purpose Blend (You can purchase my On Everything All-Purpose Blend for authentic flavor or make your own blend----See Notes)
  • 1 teaspoon smoked paprika
  • sea salt, to taste

TOAST:

  • 2 slices rustic bread, toasted
  • 2 organic Haas avocados, mashed
  • 1 teaspoon lemon juice
  • Pinch of sea salt + black pepper

Instructions

TO MAKE THE HOT HONEY CHICKPEAS:

  • In a medium skillet (10-inch) over medium-high heat, add the olive oil until heated. Add the chickpeas followed by: On Everything All-Purpose Blend, smoked paprika, and salt, stirring to combine. Let it cook for about 3-4 minutes, stirring occasionally.
  • Add in the hot honey, stirring until chickpeas are coated. Reduce the heat to low and allow everything to simmer for 5-6 minutes, stirring occasionally. Once done, the sauce should be "cooked unto" the chickpeas. Remove from heat and set aside.

TO MAKE THE PESTO EGGS:

  • In a non-stick large skillet (SEE TIP IN NOTES) over medium-high heat, add 1 tablespoon of olive oil and once heated, crack both eggs into the skillet separately. Top EACH egg with 2 Tbsps of pesto and sprinkle ½ teaspoon of On Everything All-Purpose Blend.
  • Allow both eggs to fry until the tops begin to bubble, the white becomes solid + cooked through, and the edges become golden, about 1-2 minutes. At this point, slide the spatula around one side of the egg at the edge to loosen it and gently slip it under the egg and flip it onto it's opposite side. Repeat this step for the other egg.   • Let the eggs continue to fry until the opposite side becomes golden at the edge and the yoke appears cooked through, about 1-2 minutes. Remove from heat.

MASH THE AVOCADOS:

  • In a bowl, add the flesh of each avocado (by removing the flesh from their pits and skin) along with lemon juice, salt, and black pepper, mashing everything together using a fork until combined and smooth. NOTE: chunks are OK to have if desired. You can also use my Guacamole recipe as a great substitute as well.
