Now that July is coming to a close, I’ve been thinking about great Fall recipes. I know—it’s insane. Summer is practically over and it’s a little bittersweet for me.

While I can admit that it’s been EXTREMELY hot this Summer, I do enjoy the sunny days and longer daylight.

Anyway, I’m excited to share this SunButter recipe with you because I know that many of you LOVE brownies + chocolate, so this healthy combination of flavors will be one for the making!

If you’ve been an avid reader of Orchids + Sweet Tea, then you’ll know that I’ve had my fair share of SunButter flavored recipes and have fallen in complete love with this interestingly tasty, nutty butter.

WHICH SUNBUTTER IS THE BEST FOR THESE BROWNIES?

OK, so if you’ve been following my SunButter recipes, then you’ll know that there are a variety of flavors.

While I’ve had the pleasure of trying out all of the flavors and textures added, I must let you know that using a specific version for these brownies are matter of preference.

Because SunButter has a different texture and “oiliness” than other butters, it’s so important to use the right amount AND the right version, especially for certain desserts.

However, after much testing, I’ve realized that the SunButter Creamy version worked the BEST with this recipe, like many other recipes that I’ve done!

Personally, the creamy version is just that—smooth and creamy and it mimics most popular butters (in terms of consistency) the best.

Granted, you can also use their Organic, No-Sugar Added, or Natural versions. In addition, you can also use their Natural Crunch version, if you’re into enjoying a little crunch in every bite.

HERE’S A FEW TIPS THAT I’VE LEARNED FOR MAKING THE PERFECT BROWNIES:

  • Don’t over-mix! Over-stirring will cause the gluten to overdevelop, which makes it too chewy and dense.
  • Use the right baking pan! THIS IS IMPERATIVE! Metal pans (which are the best ones to use–makes your brownies bake faster; Glass pans make them take longer.)
  • USE PARCHMENT PAPER! This helps your brownies to come out clean, well-structured, and just perfect!
  • Lastly, always wait for them to FULLY cool before cutting them. Brownies are best structured and textured when cooled entirely.

Now, let’s dig right into this recipe–-shall we?

Preheat oven to 350 degrees Fahrenheit and add parchment paper to a 8×8 square baking pan (Remember metal pans are best!).

In the bowl of an electric mixer—Combine the maple syrup, coconut oil, pure cane sugar, vanilla extract, and all-purpose flour and mix until well combined. NOTE: Mixture should look like “wet sand”.

Reduce the mixer’s speed to low and slowly add the cocoa powder, sea salt, and baking soda, mixing until well combined.

Fold in vegan chocolate chips until fully incorporated.

Next, pour the batter into the prepared pan and spread evenly.

Bake for 40-45 minutes, or until a toothpick or knife that is inserted in the middle comes out clean.

Once done, let it cool slightly, about 10-15 minutes before removing the brownie from the pan to cool fully by lifting the parchment paper.

To Make Chocolate Glaze:

Add vegan chocolate chips and 1-2 Tbsps of milk to a small pot on medium-high heat until everything begins to melt. Reduce heat and constantly stir until chocolate is fully melted.

Once fully cooled, cut brownie into mini squares (about an inch wide on all sides) and spoon melted chocolate stop each square. If desired, sprinkle Sunflower Seeds atop chocolate. Repeat until all brownies are glazed.

Ingredients

  • 2 cups organic all-purpose flour (I used Bob's Red Mills)
  • 1/3 cup pure cane sugar
  • 1/2 cup coconut oil, melted
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 1 Tbsp SunButter, Creamy
  • 1 cup vegan semi-sweet chocolate chips (I used Enjoy Life Products)

Chocolate Glaze + Topping:

  • 1/2 cup vegan semi-sweet chocolate chips
  • 1-2 Tbsps Almond milk (You can use your fave plant-based milk)
  • Sunflower seeds, optional

Tips & Tricks

STORAGE: Can be stored in a tightly sealed container and best if placed in the refrigerator for up to 3 days for ultimate freshness.
SWEETENER: If you choose to opt out of pure cane sugar, you can always substitute for coconut sugar or pure maple syrup instead. If using pure cane sugar, ensure that it is Vegan-approved such as the Wholesome brand, etc. 
OILS: You can also use Grapeseed oil or Avocado oil if preferred.
GLUTEN-FREE VERSION: To make these brownies GF, I recommend using a GF Flour Blend (Bob’s Red Mills has a great version!). Reduce Coconut oil amount to 3 Tbsps, add 1 tsp apple cider vinegar, and 2 Tbsps of flaxseed meal or chia seeds + 3 Tbsps of water. Continue w/ remaining ingredients and measurements.
