These Mini Chocolate Chip + Chia Seed Energy Muffins are the perfect grab-n-go breakfast or snack for the entire family. Packed with delicious traditional chocolate chip flavor, these muffins also offer bursts of chia seeds and offers a good dose of nutrients (great for energy), are naturally sweetened, and super easy to make. All Vegan ingredients. Gluten-free option available.

Mini Chocolate Chip + Chia Seed Energy Muffins

I’m usually not a muffin type of girl (I eat them ever so often!). However, I was super excited to make these mini muffins.

Most of us are quarantined in our homes due to this National crisis, therefore, easy recipes are a MUST! Am I right?

Whelp, no worries—we’ve got you covered! I’ve been busy creating a few amazing recipe options that are perfect during this time and I’m looking forward to sharing them with you all.

I don’t know about you, but I thoroughly enjoy sweets in miniature sizes. I guess it creates less guilt when they’re smaller, right? Haha.

Back to these muffins—I’ve recently fallen in love with chocolate chip and pairing them with chia seeds for these muffins was a super amazing move.

When it comes to muffins, the awesome part about it is that they are fully customizable and can be adjusted in flavor based on your own personal preference.

Recently, I made these Healthy Blueberry Oatmeal White Chocolate Muffins and they were SO GOOD!

But have you tried Oatmeal + Blueberry + White Chocolate? If not, you’re definitely missing out! Such a killer combo!

But these are so perfect for kids, especially since they LOVE chocolate chips. I don’t know what it is. Haha.

Mini Chocolate Chip + Chia Seed Energy Muffins

Now, let’s dig right into this recipe, shall we?

Preheat your oven to 350 degrees Fahrenheit and lightly spray a 24-cavity mini cupcake/muffin pan with coconut oil spray or a healthy cooking oil spray.

In a small bowl or measuring cup, combine the milk and apple cider vinegar, stir anf let is sit for 8-10 minutes. **NOTE: This acts like “buttermilk”.**

In a large bowl, combine the flour, baking powder, chia seeds, sea salt, and baking soda. Whisk ingredients together until well combined.

Add the milk-cider mixture to the dry ingredients followed by the coconut oil, Agave, and vanilla. Stir all ingredients together using a rubber spatula until everything is well incorporated.

Gently fold in chocolate chips and using a Tbsp, spoon batter into the prepared mini cupcake/muffin pan (about 3/4-1 full Tbsp each), spreading the batter evenly within each cavity.

Bake for 20-25 minutes, or until a toothpick or knife that is inserted in the middles comes out clean.

Once done, remove muffins from oven and let them cool for a bit (about 10 minutes) before removing them from the cupcake/muffin pan.

To serve, enjoy a mini muffin with a glass of non-dairy milk, coffee, or tea, and enjoy.

Ingredients

  • 2 cups organic all-purpose baking flour (I use Bob's Red Mill)
  • 2 tsps baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 2 Tbsps chia seeds (I use Navitas Organics)
  • 1 cup Almond milk + 1-2 Tbsps! (You can use your favorite non-dairy milk!)
  • 1 tsp apple cider vinegar
  • 1/4 cup coconut oil (See Notes!)
  • 1/2 cup Agave syrup (See Notes!)
  • 1 tsp vanilla extract
  • 3/4 cup mini chocolate chips, vegan-approved! (I use Enjoy Life Foods)

Tips & Tricks

STORAGE: Can be tightly sealed in the refrigerator for up to 5 days. When ready to serve, slightly warmed before eating.
GLUTEN FREE: To make these muffins GF, simply substitute all-purpose flour with 1  cup Almond flour + 1/2 cup Oat flour. Just be sure to see whether more flour is needed due to the amount of liquids.
SWEETENER: If you choose to opt out of Agave, you can always substitute w/ pure maple syrup, date syrup, coconut sugar or pure cane sugar instead. If using pure cane sugar, ensure that it is Vegan-approved such as the Wholesome brand, etc. 
MUFFIN SIZE: This recipe will make 12 standard muffins, if desired.
OIL: Instead of coconut oil, you can also use vegetable oil or melted butter, if preferred.
