This Delicious Vegan Lasagna Soup is sure to keep you warm and comforted throughout the cooler months of the year and you're guaranteed to be satisfied. A great weeknight option or weekend addition, this soup boasts of it’s major flavor factor and comes loaded with tender lasagna noodles, bold tomato flavor, seasonings + herbs, chopped kale, and a nice gooey cheese topping that comes entirely dairy-free + vegan. This warming lasagna soup recipe is proof that you can make a healthier version of your favorite comfort food and enjoy it every bit as much. If you're anything like me, then lasagna and melty cheese are two of your favorite things, especially growing up. I don't know---It's probably my Southern roots. Haha. BUT, I think that most of us can agree that there's something comforting and satisfying about lasagna and this Delicious Vegan Lasagna Soup is no different! So since I started reducing my dairy intake overall a few years ago, I've found new ways to enjoy my faves without compromising taste! That's kind of WHY I created Orchids + Sweet Tea! And that's why I'm thrilled to share one of my all-time favorite vegan recipes: a velvety flavor-packed lasagna soup like this one which was originally created in 2019, but recently revamped + reshot. Don't worry, there's still plenty of gooey melted mozzarella, it just happens to be dairy-free------I highly recommend brands like So Delicious Dairy-Free or Violife for a high-quality cheese shreds option. How to Make Vegan Lasagna Soup

OK, so of course, the biggest question for those who have never made this kind of soup is, how do you make it anyway? Well, it's super easy! Personally, it’s all about using broths more than just fresh water, which adds a ton of extra flavor. My go-to brand for both chicken + veggies broths is Whole Foods Market or Pacific Foods

The process to making this soup is achieved in just a few short steps:

  • Sauté your onions, tomatoes, and garlic then season. Add in liquid and other ingredients and let simmer.
  • Add lasagna sheets and let simmer some more. Season more to taste.
  • Serve soup in prepped bowls (oven-safe), top with cheese, bring to a quick broil (for a gooey, melty top) and enjoy!

Ingredients for Vegan Lasagna Soup

I decided to fill this soup with as many colorful vegetables as possible. The result is a flavor- and nutrient-packed recipe that's a favorite among kids and adults. 

Here's what you need to bring healthy vegan lasagna soup to life:

  • Lasagna noodles. You can substitute with your favorite pasta shape, if preferred. For a gluten-free version, simply use gluten-free pasta. 
  • Olive oil. You can also use Grapeseed oil or coconut oil as well.
  • Veggie stock. Use store-bought low-sodium broth or make your own! 
  • Red onion. Substitute with yellow or white if that’s what you have.
  • Garlic. I prefer fresh, but you could substitute with ½ teaspoon garlic powder in a pinch. 
  • Herbs + Seasonings. A great addition of flavor. Adds such savoriness from the Italian seasoning. You can make it homemade or use a store-bought version.
  • Mozzarella 'cheese'. I love a good melty, gooey top and quality does matter! For a great mozzarella cheese shred options, So Delicious Dairy-Free or Violife cheese shreds are the best!
  • Tomatoes. You can add as many tomatoes as you'd like to fill this soup. I used grape tomatoes, however, heirlooms, roma, etc. works too! Just chop them up into nice bite-sized pieces. You can even add roasted herb tomatoes for a nice touch!
  • Tomato paste. This adds additional flavor + color to the soup.
  • Kale. Use fresh for best results, but frozen also works! Ensure that it's chopped.
  • Nutritional yeast. This is a vegan must-have ingredient to add a hint of cheesy flavor and umami without any dairy.

How to Make Homemade Italian Seasoning

If you're thinking about making your own Italian seasoning blend, then look no further! All you need is handful of herbs + spices, mix them together, and wallah:

  • Oregano

How to Store Homemade Italian Seasoning

You can keep leftover seasoning in a small tightly sealed jar and at room temperature for up to 6 months like your other herbs + spices.

You can make them ahead of time in the oven, then keep the tomatoes in the fridge unit you're ready to make this lasagna soup. They'll stay fresh for up to three days in an airtight container.

I like to add some extra texture to velvety soups like this one. Most people might enjoy this creamy lasagna soup with a side of bread, which is totally fine. But I wanted to share a few more ideas incase you make this soup more than once and want to switch things up!

How to Store Leftover Delicious Vegan Lasagna Soup

Leftovers can be stored in a tightly sealed container in the refrigerator for 2-3 days, for optimal freshness. Can also be frozen for 4-6 months. To defrost, simply place soup in the refrigerator overnight or at room temperature before re-heating on the stove top to serve.

Do I Have to Use Lasagna Noodles Only?

Technically, since this is a vegan lasagna soup, using lasagna noodles is ideal, however, like with most of my recipes you can always substitute the ingredients that work best for you! In this case, you can use any shape pasta that you desire. These work great: Penne, Tortellini, Gnocchi, Orzo, Fusilli, Rigatoni, Paccheri, Orecchiette, etc. are perfect.

Is Vegan Lasagna Soup Gluten-Free?

Yes! To make this soup GF-friendly, simply substitute lasagna noddles with a gluten-free version (or other pasta) and ensure that other ingredients are GF-friendly and you use GF bread on the side, if using.

Can I Make this Delicious Vegan Lasagna Soup in a Slow Cooker?

To make this soup in the slow cooker, simply sauté garlic, onions, and tomatoes before adding everything (including lasagna sheets) into your slow cooker and cooking on a low setting for 6-8 hours, stirring occasionally.

Delicious Vegan Lasagna Soup

Ingredients

SOUP:

  • 1 tablespoon Extra virgin olive oil
  • ½ red onion, chopped (You can also use white or yellow onion, if preferred)
  • 4 garlic cloves, minced
  • 2 cups diced tomatoes (You can also use a 14.5 oz can of diced tomatoes)
  • 1 (15 oz.) can organic tomato sauce
  • 2 Tbsps organic tomato paste
  • 1 tablespoon Italian seasoning, homemade or store-bought
  • 1 tablespoon nutritional yeast
  • 1 teaspoon sea salt
  • 6-8 organic lasagna sheets, broken into medium pieces
  • 4 cups organic vegetable stock
  • 1 cup dairy-free mozzarella cheese shreds
  • 1 cup organic kale, chopped

OPTIONAL GARNISH:

  • 1 teaspoon dried or fresh parsley

Instructions

TO MAKE THE SOUP:

  • In a medium-sized dutch oven pot over medium high-heat, add the olive oil. Once heated, add the minced garlic and chopped onions, and sauté until translucent + fragrant, about 1-2 minutes. Add in the diced tomatoes, stirring to sauté a bit. Add the tomato paste followed by the Italian seasoning, nutritional yeast, and salt, stirring until combined.
  • Add in the veggie stock and tomato sauce, stirring frequently to avoid any lumping. Add in the chopped kale and broken lasagna noodles, stirring to combine. Let everything simmer for another 15-20 minutes or until the lasagna noodles are fully cooked through and tender.
  • Add in the grated mozzarella and parmesan, stirring until cheese has melted and the soup become creamy. Simmer for another 1-2 minutes. NOTE: To create a gooey, melty topping, spoon the soup into oven-safe bowls. Preheat the oven to broil and add the cheese shreds atop top in each bowl. Place the bowls atop a small baking sheet and broil for 2-3 minutes or until cheese becomes smooth and melted mostly.
  • Remove from heat and serve immediately into prepared bowl(s), top with dried or fresh parsley, and with a side of bread, if desired.
