These Roasted Chickpea Quinoa Sweet Potato Chipotle Ranch Tacos are the absolute perfect tacos your taste buds will ever taste! An easy vegetarian option for the entire family that is weeknight-friendly, meal-prep ready, made in under 45 minutes, and jam-packed with bold, savory flavors. Gluten-free option.
Making this quick homemade cranberry sauce is SO EASY! Literally a few minutes and voila!
What You’ll Need:
1/4 cup fresh water
1/2 cup organic pure cane sugar or maple syrup
2 cups organic cranberries, fresh or frozen
To Make it:
Combine all ingredients into a medium pot on medium-high heat, just until the sugar dissolves. Ensure that you stir all ingredients together well.
Once it begins to boil, reduce heat and let simmer until cranberries are softened and ‘bursting’.
Once cranberries are fully cooked and ‘sauce-like’/thickened, remove from heat and let cool for 5-10 minutes.
OK, so when it comes to most meats that I cook, I often love to ensure that they are marinated overnight.
Why? Whelp, for one, marination allows for the chicken to be infused with all of the flavors in the marinade. Secondly, believe it or not, the acidity in your marinade actually breaks down the muscular interconnectivity of your meat, which makes it more tender.
Therefore, I always recommend marinating your chicken overnight to get the best flavors and tenderness out of your dish!
For a burst in flavor, I marinated this chicken with Drew’s Organics’ Rosemary Balsamic Dressing/Marinade along with my usual go-to seasonings—1tsp sea salt, 1 tsp black pepper, 1 tsp dried parsley, 1Tbsp smoked paprika, and 1tsp garlic powder.
Of course, you can see the actual steps/instructions within the recipe notes.
Let’s dig into this recipe, shall we?
Preheat your oven to 400 degrees Fahrenheit and prepare a large cast iron skillet, lightly greasing it.
Add your seasoned chicken to the center of your skillet and spread it out a bit to ensure that everywhere is cooked through.
Next, add in the potatoes, carrots, + brussels sprouts, coating them lightly with grapeseed oil and lightly seasoning them.
Drizzle rosemary balsamic dressing atop chicken and brush cranberry sauce onto it until fully covered. Stuff inside of chicken with onions and lemons.
Bake in the oven for 40-45 minutes, until chicken begins to cook through and veggies begin to become tender.
In the meantime, in a small saucepan on medium-high heat, heat the rosemary balsamic dressing and remaining cranberry sauce together, stirring until it becomes bubbly, about 1 to 2minutes. Remove from heat.
Spoon the heated sauces over the top of the chicken and veggies, add whole cranberries (fresh or frozen), baking everything for another 20-25 minutes.
Once done and chicken/veggies are golden brown and have fully cooked through, remove from oven and serve immediately.
Garnish with dried parsley, if desired.
