This Chicken Bacon Ranch Chopped Kale Salad is fresh, hearty, and packed with flavor—perfect for an easy lunch or healthy dinner.

Ingredients

SALAD:

  • 3-4 grilled or baked chicken breasts, chopped (You can also use shredded chicken or chicken tenders)
  • 2 bunches organic kale, de-stemmed + roughly chopped
  • 1 english cucumber, peeled + sliced
  • 2 cups cherry or grape tomatoes (You can also use my Roasted Herb Tomatoes for more flavor)
  • 8 slices cooked bacon (For extra flavor, you can try my Candied Bacon recipe)
  • 1 cup croutons, homemade or store-bought (You can make my Homemade Croutons)
  • 1 cup feta cheese crumbles (You can substitute with shaved parmesan or your fave shaved hard cheese)
  • 1 cup Ranch dressing (To make your own homemade dressing, see my Vegan Ranch Dressing recipe)

Instructions

TO MAKE THE BACON:

  • To cook the bacon, you can follow my Candied Bacon recipe. Feel free to omit the sugar for regular bacon!

CHOP + MASSAGE THE KALE:

  • Strip the leaves from the bunch of kale and discard the stems if you haven't already. Roughly chop the leaves of the kale and add them to a large bowl. Drizzle about 1-2 tsps of lemon juice or olive oil atop chopped kale and using clean hands, rub together the kale gently for about 2-3 minutes to soften the leaves and help to infuse the 'flavors' of the kale.

TO MAKE THE RANCH DRESSING:

ASSEMBLE + CHOP THE SALAD:

  • On a large cutting board, add half of the kale followed by half the amount of the following: chopped chicken, halved tomatoes or roasted herb tomatoes, cucumbers, and cooked bacon, and using a 'salad chopper', precisely chop everything together (working your hands to keep them together when needed) until ingredients are cut "fine. Add chopped ingredients into a large serving bowl and REPEAT with remaining half of ingredients.
  • To serve, add the chopped salad to your bowl(s), drizzle with the ranch dressing, and add your favorite toppings like feta cheese crumbles, croutons, etc. if desired.

  • STORAGE: Leftovers (salad without dressing) can be refrigerated in an airtight container for up to 3 days, depending on the ingredients. Always determine the ingredients in your salad and keep it no longer than the shelf life of your fastest-spoiling ingredient.
