It's Thanksgiving and it's so imperative that stuffing makes it's way to the table, right? And while there are dozens of ways to make this popular side dish, from Skillet Vegan Stuffing to Wild Rice Stuffing to Southern-Style Cornbread Stuffing, my family always has a classic Southern-style stuffing on the table. It's made with cornbread and has a savory, smoky and sweet flavor that everyone loves. However, I wanted to create something super simple this year and with a nice twist----croissants. That's how this Buttery Herb Croissant Stuffing was born!
Seasoned with my signature On Everything All-Purpose Blend, garlic powder, and sea salt, this stuffing delivers deep, homey flavor in every bite. Whisked eggs bind everything together so it bakes up perfectly—creamy, buttery, aromatic, and irresistibly melt-in-your-mouth.
Perfect for Thanksgiving, Christmas, or any cozy gathering, this croissant stuffing is an elevated twist on the traditional recipe. It’s rich, comforting, foolproof, and guaranteed to become the new holiday favorite at your table.
There’s a special kind of comfort that comes from gathering around the table—where familiar flavors meet new memories, and God’s goodness feels close and tangible. This Croissant Stuffing is a reminder of that warmth. Each flaky croissant, every melted pat of butter, and all the fragrant herbs echo the truth that God often blesses us in the simplest of ways—through nourishment, connection, and the joy of sharing a meal. As you prepare this dish, may it fill your home with comfort and your heart with gratitude for the people and moments God has given you.

Tear or chop your butter croissants into pieces and toast them until lightly golden. Sauté celery, onions, garlic, and butter until softened and fragrant. Add the croissants to a large bowl and toss with your sautéed aromatics, herbs, seasonings, melted butter, eggs, and chicken stock until everything is well-coated. Transfer to a baking dish, cover with foil, and bake until soft and steamy—then uncover and bake again to crisp the top. Serve warm with extra herbs or melted butter.

Your stuffing mixture should feel:
When you squeeze a handful lightly, it should hold together but still feel airy.

Croissants don’t just make good stuffing—they make exceptional, next-level stuffing that outshines traditional bread-based versions in both texture and flavor. Here’s why they’re the ultimate upgrade:
Croissants are naturally rich and buttery.
Unlike regular bread, croissants are layered with butter during baking. This fat content melts into the stuffing, infusing every bite with rich, decadent flavor without needing extra butter (though we still add some because… holidays).
This means your stuffing tastes luxurious, comforting, and restaurant-quality with minimal effort.
Their flaky layers soak up flavor beautifully.
Each croissant is made of thin, buttery layers that:
This creates that ideal stuffing texture everyone loves: soft + moist in the middle, golden + crispy on top.
Croissants avoid the “gummy” texture bread can create.
Traditional bread can sometimes become mushy, dense, or overly wet when soaked in stock.
Croissants, however, maintain structure because of their laminated dough, giving a stuffing that is:
Perfect every time.
They add natural flavor you don’t get from plain bread.
Plain sandwich bread or baguettes need a lot of seasoning to taste like something.
Croissants already bring:
This means the final stuffing tastes more complex, flavorful, and gourmet without extra work.
Croissants pair beautifully with both sweet and savory mix-ins.
Their buttery flavor makes them incredibly versatile. They complement:
You can take this stuffing in dozens of directions and croissants enhance them all.
They make the dish feel special and holiday-worthy.
Croissants immediately elevate stuffing from “classic side” to statement dish.
It feels:
Perfect for Thanksgiving, Christmas, or any cozy gathering where you want your side dishes to shine.
