It's Thanksgiving and it's so imperative that stuffing makes it's way to the table, right? And while there are dozens of ways to make this popular side dish, from Skillet Vegan Stuffing to Wild Rice Stuffing to Southern-Style Cornbread Stuffing, my family always has a classic Southern-style stuffing on the table. It's made with cornbread and has a savory, smoky and sweet flavor that everyone loves. However, I wanted to create something super simple this year and with a nice twist----croissants. That's how this Buttery Herb Croissant Stuffing was born!

Transfer to a baking dish, cover with foil, and bake until soft and steamy—then uncover and bake again to crisp the top. Serve warm with extra herbs or melted butter.

Ingredients

  • Butter Croissants (Chopped). The star of this stuffing! Their flaky layers soak up flavor beautifully, creating a tender interior with crisp, golden edges.
    Substitutes: Brioche, challah, French bread, sourdough, or a mix of artisan breads.
  • Salted Butter. Adds richness, moisture, and deep buttery flavor throughout the stuffing.
    Substitutes: Unsalted butter + a pinch of salt, vegan butter, or ghee.
  • Fresh Garlic (Minced). Brings aromatic depth and enhances the herb-forward flavor of the stuffing.

My stuffing turned out mushy or soggy.

This is the most common issue with croissant stuffing because croissants absorb liquid very quickly.

  • Spread stuffing in a larger baking dish for more surface area (more crisping).
  • Bake uncovered for an additional 10–15 minutes to evaporate excess moisture.
  • Stir halfway through baking to redistribute wet pieces.
  • Add a handful of untoasted croissant pieces to absorb extra liquid.

A golden, Buttery Croissant Stuffing packed with herbs, aromatics, and savory flavor—your new favorite Thanksgiving and Christmas side.
Prep Time: 20 minutes
Cook Time: 45 minutes
Total Time: 1 hour 5 minutes
Serves: 6 servings

Ingredients

STUFFING:

  • 12 cups chopped butter croissants (You can toast the croissants to keep the stuffing from getting mushy and helps absorb flavor, however, it's not a must!)
  • ¾ cup salted butter + 2 Tbsps
  • 2 garlic cloves, minced
  • 2 cups chopped celery (That's about 1-2 stalks)
  • 1 onion, chopped (You can use white, yellow, or red)
  • 2 tsps On Everything All-Purpose Blend (You can purchase my On Everything All-Purpose Blend for authentic flavor or make your own blend----See Notes)
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt, optional
  • 2 large organic eggs, whisked
  • 1 cup chicken stock, organic (Plus more, if needed)

Instructions

  • Preheat the oven to 375 degrees Fahrenheit and lightly grease with butter or oil a standard (9x13) baking dish or griddle pan.

PREP THE CROISSANTS:

  • Roughly chop the croissants into medium bite-sized pieces as desired.

SAUTE THE VEGGIES + MAKE THE MIXTURE:

  • In a medium skillet over medium-high heat, add the ¾ cup of butter and once melted, add the minced garlic and onions, sautéing until translucent + fragrant, about 1-2 minutes. Add in the celery followed by the On Everything All-Purpose blend, salt, and garlic powder, stirring everything together until combined. Continue to stir and sauté veggies until tender, about 2-3 minutes. Remove from heat.
  • In a bowl, add the chopped croissants, sautéed veggies, whisked eggs, and chicken stock, stirring to combine.

ASSEBMLE + BAKE:

  • Scoop the stuffing mixture into the prepared baking dish or griddle pan, spreading everything out evenly. NOTE: You can pour another ½ cup of chicken stock atop the stuffing mixture if desired for extra moistness.
  • Using a knife, cube the remaining 2 Tbsps of butter into small pieces and tuck them in between stuffing mixture. NOTE: Cover with foil paper to cook for the first 20 minutes and then remove and continue baking for remaining time.
  • Bake for 25-30 minutes or until the tops are golden brown and the middle is "barely jiggly".
  • Remove the stuffing from the oven and let cool slightly, about 10-15 minutes before slicing or scooping it out to serve.

  • STORAGE: Any leftovers can be kept in a tightly sealed container and refrigerated for up to 3-4 days.
  • HOMEMADE ALL-PURPOSE BLEND: 1 teaspoon sea salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon dried oregano, 1 teaspoon dried thyme, + 1 teaspoon dried parsley.
