OK, so I've been dying to share this pizza recipe with you all. I know that many of you have been thoroughly enjoying the previous pizza recipes on Orchids + Sweet Tea, BUT I must admit that this one is DIFFERENT.

I mean, first off, this is my first time trying grilled pizza. I must say that grilling my crust just might be my newest craze. It's SO EASY and SO GOOD!

I'm in love with the bit of char that you get (much like taco tortillas) and the nice crispiness is so amazing. Just the perfect combo and summer fun thing to do.

Anyway, I'm even more ecstatic to be working with ONE OF MY GO-TOs---Bob's Red Mill.

Honestly, I don't use any other brand of flour. They literally are my go-to flour company in all variations. Haha.

So of course, it would only be befitting for me to partner with them for their #BBQwithBob campaign which is such a great movement that brings awareness to their Gluten-Free options.

For this pizza crust, I chose to use their Super-Fine Almond Flour mixed in with their Gluten-Free 1-to-1 Baking Flour, which allows for a nice bit of thickness to the dough.

Of course, they have a few other Gluten-Free flours, so you're able to mix and match as you please.

Why Add 1-to-1 Baking Flour and Almond Flour?

Personally, when it comes to Gluten-Free recipes, I love using this flour blend because it makes the perfect cookies, cakes, brownies, muffins, pancakes---literally anything. How? Whelp, because in addition to it being Gluten-Free, it also includes starches such as Xanthan Gum, which allows for baked goods to be the perfect texture and form.

As for the Almond Flour, I'm a huge fan of this type of Gluten-Free flour because it's superior and is a great option for low-carb recipes. Bob's Red Mill's version is made from the finest California-grown almonds and are blanched and ground to a fine meal.

OK, so let’s talk about pizza in general for a sec!

Compared to our other homemade pizzas—Hawaiian BBQ Buffalo Chicken Pizza and Buckwheat Veggie Pizza with Chickpea + Kale Pesto Sauce and even this Chicken Spinach + Broccoli Gluten-Free pizza; this new pizza looks pretty simple, right?

Our Veggie Pizza is absolutely one of my favorite homemade pizzas to date. It comes loaded with mozzarella cheese, grape tomatoes, and broccoli and comes based with a crispy, fluffy whole wheat crust. It’s just that simple, yet it’s bursting with savoriness and flavor.

This Best Homemade Jamaican Jerk Chicken Pizza is one of the best versions of taking a traditional staple—-jerk chicken and using it to re-create something phenomenal. It comes based in a spicy-sweet BBQ jerk sauce and loaded with mozzarella cheese, bell peppers, onions, kale, jerk chicken, and scotch bonnet pepper (for an extra kick of heat). 

This Texas BBQ Sriracha Meatball Pizza is the best meatless pizza you’ll ever taste! It comes based in a spicy-sweet marriage of BBQ + Sriracha sauces, maple syrup and loaded with mozzarella cheese for a beautiful gooeyness in every bite. It’s the perfect vegetarian and weeknight meal for the entire family and it’s bursting with savoriness and flavor.

How to Ensure The Perfect Pizza Crust Every Time!

When it comes to making the perfect pizza crust, it only really takes a FEW HACKS/TRICKS for this to happen.

However, it is imperative that you follow these exact steps every time, so that the perfect crust is achieved!

Here’s How:

  • Make sure that your oven is preheated and is HOT!! This ensures that everything bakes evenly and cooks pretty fast to avoid anything that could possibly cause your pizza to be soggy or undercooked (like the dough!).
  • Never EVER use cold dough! Using cold dough changes the hydration and makes it more aggressive to stretch and work out. This isn’t good for your crust at all.
  • Always, Always use a Pizza Sheet Pan. For a crispy pizza, I suggest using a pizza pan with holes to allow the crust to bake through nicely. I used the AirBake Pizza Pan, which can be found at Target!
  • DO NOT over roll dough! When following the step of rolling out the dough slightly to flatten it, never roll out the dough too much! Be sure to follow the steps of stretching it out with your hands the rest of the way.
  • Never add TOO MUCH sauce! This step is super imperative (trust me, I learned the hard way!) and it’s such truth. Never add all the sauce entirely to avoid a soggy middle or crust.
  • Pre-cook any toppings that might require a longer cook time! This is especially true for certain veggies (and of course meats) that require a longer cook time that the allotted short amount of minutes that an actual pizza takes to cook. That way you aren’t trying to overcook your pizza because the toppings aren’t fully cooked.
  • There you have it—these tried and true tips/tricks will get your pizza coming out crisp and perfect every time! Do you have any additional tips that have worked for you besides these?

Tips to Grilling the Perfect Pizza Crust!

Much like making your pizza in a traditional oven, there are little tricks that you can do to ensure that your grilled crust is just as crispy, fluffy, and in tact, regardless of whether you're using an outdoor or indoor grill.

Here's How:

  • Always start by forming your dough as perfect as you'd like it to be and keeping it on a lightly floured baking sheet or pizza peel.
  • Don't forget to brush the sides of your dough with olive oil or some sort of oil, one side at a time as your grill. This avoids sticking BIG TIME!
  • It's best to use a tong or similar tool to flip your dough. Forks and other small tools won't work.
  • Keep your toppings close by and prepped in separate bowls/plates to avoid burning of crust while on grill.

Why Cauliflower Bites? Can this Pizza be Made Vegan?

Whelp, for one, our Crispy Buffalo Cauliflower Bites are a guaranteed showstopper, so why not add them to a pizza? Haha.

Seriously though, I just new that I needed to create a delicious vegetarian option and cauliflower bites just seemed intriguing.

At first glance, these beauties truly remind you of buffalo boneless chicken (and trust me, they taste just as good, if not better!), however, they aren’t! Just know that your taste buds won’t be able to tell the difference either! With a nice kick of spice coupled with a hint of sweetness from the BBQ sauce + Honey, these cauliflower bites are the perfect appetizer, snack, or addition to any entree. 

Of course, there's always a vegan option to this pizza if you'd prefer it that way. For one, my Cauliflower Bites has a vegan option on their own. However, to make this pizza entirely vegan, you can omit the cheese and solely use the buffalo sauce (vegan-approved) as the base OR our delicious Avocado Kale Spinach Pesto Sauce which would be the perfect base as well!

When it comes to cauliflower, it’s definitely a very healthy vegetable that offers a lot of nutrients, which include fiber, Vitamin C, Vitamin K, Folate, Potassium, Magnesium, etc.

Cauliflower also has a great source of antioxidants, which protects your body’s cells from harmful toxins and inflammations.

In addition, cauliflower may aide in weight loss. How? Whelp, they are absolutely low in calories and works as a great substitute for rice and flour.

OK, let’s just dig right into this recipe, shall we?

Make your buffalo cauliflower bites and remove from oven, setting them aside. See Buffalo Cauliflower Bites recipe.

Homemade Gluten-Free Pizza Crust Dough:

In the bowl of an electric mixer (with a dough hook attachment), mix together the warm water, honey (or sugar), olive oil, yeast, garlic powder, and sea salt (you might need to use a whisk to ensure that everything combines together well). Let is sit for at least 5 minutes, until yeast begins to activate and foam.

In a large bowl, whisk both flours together.

Slowly add both flours (on low speed!), until fully incorporated and a soft dough is formed. **NOTE: if dough is too sticky, add ½ cup of additional 1-to-1 baking flour at a time)**. 

Now, increase the speed to medium-high and knead the dough for about 5 minutes in the mixer. 

Once done, remove from mixer and form into a circular pizza shape and place on a lightly floured surface. Let sit for 5 minutes before reforming again if needed.

Assembly:

Prep your gas, charcoal, or electric indoor grill to to high heat.

Brush one side of the dough with oil and transfer the dough (olive oil side down) to your heated grill. Grill the dough for about 2-3 minutes until charred. Brush the top side with oil and using a tong, carefully flip the dough to the opposite oiled side.

At this point, spoon a generous amount of the buffalo sauce to the top (with the crust still on the grill), followed by mozzarella cheese, kale, and the buffalo cauliflower bites.

Grill everything for 3-4 minutes, or until the mozzarella cheese has melted and kale has cooked.

Using tongs, remove the pizza from the grill and drizzle with ranch sauce or your favorite sauce.

Slice and serve immediately.

Ingredients

GLUTEN-FREE PIZZA CRUST:

  • 1 cup Bob's Red Mill 1-to-1 Baking Flour
  • ¾ cup Bob's Red Mill Super Fine Almond Flour
  • 1 cup WARM fresh water
  • 1 tablespoon honey or organic pure cane sugar (See Notes for Vegan Option!)
  • 1 packet rapid-rise or instant yeast (That's 2 ¼ tsps!)
  • 1 tablespoon Extra virgin olive oil (See Notes!)
  • ¼ teaspoon sea salt
  • 1 teaspoon garlic powder

FOR PIZZA:

  • Crispy Buffalo Cauliflower Bites (See Notes for Recipe!)
  • 2 cups shredded Mozzarella cheese
  • 2 Tbsps Extra virgin olive oil (See Notes!)
  • ½ cup Buffalo sauce, Store-bought or Homemade (See Notes!)
  • 1 cup organic kale, chopped
  • Ranch Sauce or your Fave Sauce!

STORAGE: Leftover pizza is best kept tightly wrapped in foil paper, refrigerated for 3-4 days for optimal freshness.

  1. I’m fairly new to gf baking. I’ve been gf for a while but have just avoided anything traditionally made with flour. But I do miss pizza, and can’t wait to try yours! Here’s my question— I always understood the purpose of kneading was to develop the gluten into nice long chewy strands. With a gf recipe, why the 5 minute kneading? Yours isn’t the first recipe I’ve seen that asks for that, but I don’t know if it’s force of habit carried over from working with traditional flours or what kneading does to gf dough. Do you have insight on this? Thanks in advance, and thanks for the recipe. I too love BRM products!

    • Hi Pam! Thanks so much for choosing to try my pizza! I truly can't wait to hear your thoughts once you try it! You're absolutely right about that----GF dough doesn't require kneading because the gluten comes from the xanthan gum that's included, however, I knead it a few times just for an easier consistency when moving it around and stretching it out. Rest assured, you don't have to do this for 5 whole minutes (this is more by habit. haha), therefore, just knead it enough until the consistency is right. 🙂

  2. This pizza was delicious!!! I air fried the cauliflower bites (so as not to heat up the house!) and they came out so crispy! All three of my sons said it was “great,” and my husband said it was the best meatless meal I’ve made; this is high praise, since all of my guys are hardcore carnivores, lol! Great recipe!
