Ingredients

GNOCCHI BAKE:

  • 2 Tbsps unsalted butter
  • 1 tablespoon Extra virgin olive oil
  • 2 (16 oz) packages potato gnocchi, homemade or store-bought
  • 1 head organic broccoli, chopped into florets (You'll want about 3-4 cups worth)
  • 2 cups cooked shredded chicken
  • 4 garlic cloves, minced
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 Tbsps organic all-purpose flour
  • 3 cups organic chicken stock
  • 1 ½ cups organic heavy cream
  • 2-3 cups sharp cheddar, shredded or grated

TOPPING:

  • 1 cup sharp cheddar, shredded or grated

Instructions

TO COOK THE BROCCOLI:

  • In a medium-sized skillet over medium-high heat, add the olive oil. Once heated, add the broccoli florets, tossing them until they become slightly tender, about 3-4 minutes. Remove from heat and let cool.

TO MAKE THE CREAMY BROCCOLI CHEDDAR SAUCE:

  • Preheat the oven to 375 degrees Fahrenheit and prepare a standard 9x13 baking dish. NOTE: If it's not non-stick, be sure to coat it with oil or butter.
  • In the medium deep skillet over medium-high heat, add the butter until melted. Add in the minced garlic and sauté until fragrant, about 1 minute.
  • Add in the seasonings: salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, oregano, basil, and parsley and stir until combined. Add in the flour and whisk until combined.
  • Reduce the heat to medium-low and slowly add in the heavy cream and chicken stock, whisking until combined and the sauce begins to thicken a bit from the flour. Let it slightly bubble for 1-2 minutes and then add in the grated or shredded sharp cheddar, whisking again until fully melted and sauce thickens, about 2-3 minutes.
  • Add in the uncooked gnocchi, shredded chicken, and sautéed broccoli, stirring everything together until they are fully coated. After about 1-2 minutes, remove from heat.

BAKE EVERYTHING TOGETHER:

  • Carefully transfer the broccoli cheddar mixture into the prepared baking dish and sprinkle the remaining sharp cheddar cheese atop everything until fully covered.
  • Bake (without being covered) for 15-20 minutes or so, or until cheese has fully melted, the top is browned or golden slightly, and the sauce is bubbly at the sides.
  • Remove from oven and serve with your favorite salad or bread.
