Ingredients

CHICKEN BREASTS:

  • 4 large organic chicken breasts, bone-in (You can also use boneless chicken breasts; See Notes for cooking time adjustment)
  • 2 Tbsps Extra virgin olive oil
  • 2 tsps On Everything All-Purpose Blend (You can purchase my On Everything All-Purpose Blend for authentic flavor or make your own blend----See Notes)
  • 2 tsps smoked paprika
  • 1 teaspoon sea salt
  • 1 teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • 1 medium apple, sliced (You can leave the skin on; See Blog Post for best types of apples)
  • 1 cup organic chicken stock

HOMEMADE APPLE HONEY DIJON GLAZE:

  • ½ cup raw honey
  • 2 Tbsps dijon mustard
  • 1 medium apple, sliced
  • ¼ cup organic chicken stock

Instructions

PREP + SEASON CHICKEN:

  • Preheat the oven to 400 degrees Fahrenheit and lightly grease a non-stick griddle pan or large oven-safe cast iron skillet.
  • In a large bowl, add your freshly cleaned + rinsed chicken along with olive oil + seasonings: salt, On Everything All-Purpose Blend, cumin, cinnamon, and smoked paprika, mixing everything together until chicken is fully coated.
  • Placing seasoned chicken breasts onto a clean cutting board, cut little "slit-like" cuts atop each breast, about 1-inch or so apart. Repeat until all chicken breasts are cut with this design.
  • NOTE: Best when marinated for a while! To do so: Add coated chicken to a securely sealed ziplock bag and place in the refrigerator for 3 hours (minimum). Best if marinaded overnight. When ready to use, let chicken sit at room temperature for 15-20 minutes before cooking.

BAKE THE CHICKEN:

  • Line seasoned chicken breast (side by side) onto prepared griddle pan or skillet, leaving a bit of room in between each one. Add the sliced apples in between and around the chicken breasts. NOTE: If using veggies like potatoes, butternut squash, etc. be sure to add them in with the chicken to fully cook through.
  • Pour the chicken stock around everything and bake for 35-40 minutes or until golden brown and crispy on the outside and fully cooked through on the inside. NOTE: In the last 15 minutes or so, you'll want to add the glaze!

TO MAKE THE APPLE HONEY DIJON GLAZE:

  • In a saucepan over medium-high heat, Add the honey, dijon mustard, sliced apples, and chicken stock, bringing everything to a boil. Reduce the heat to medium-low and let it cook through for 1-2 minutes, stirring everything together until sauce becomes smooth and thickened a bit. Remove from heat.
  • Generously spoon the homemade apple honey dijon glaze atop the chicken and any other veggies if using until completely covered. NOTE: You can save a small amount of glaze for garnish, if desired.
  • Let everything bake for another 15 minutes or so or until the glaze "bakes onto" the chicken and becomes nicely caramelized.
  • Remove from oven and let everything cool slightly. Spoon on remaining apple honey dijon glaze and serve with your favorite side of saladpastabasmati ricebrown rice, mashed potatoes, etc.
