Avocado Hummus with Peppers + Pine Nuts

This Avocado Hummus with Peppers + Pine Nuts recipe is a great way to snack healthier. The creaminess comes from not only the avocado, but the tahini, which is essential. Full of nutty flavor, garlic and herbs, and topped with finely diced bell peppers and sprinkles of pine nuts, this hummus is a sure winner on any given day. All gluten-free.

Happy #WellnessWednesday ya’ll. It’s the middle of the week and that means that the weekend isn’t that far behind. Who else is ready for the weekend already? I know that I am.

Whelp, I’ve been doing a lot these past few days and it honestly has felt like there isn’t enough time in the day!

Plus, we’re expected to have a ton of rain here in NYC this week so there isn’t much to do outside like get ice cream from the ice cream truck, take a walk, play in the park with the little guy, etc. Haha. So much for nice Spring weather.

With June just around the corner, I’m guessing that we’ll just go straight to Summer here. Oh well.

Speaking of June, my little guy’s 3rd Birthday is quickly approaching and I’ve been contemplating on what I want to do to celebrate.

The past two years, we’ve just done a cake, gifts, balloons, and wallah! BUT this year, I’m thinking of possibly ding something different.

Nothing too crazy of course, because he’s ONLY 3 and I’m saving the really big stuff for next year and onward. Last year, my husband and I attempted to make a great Very Vanilla cake, which turned out great actually!

The only struggle was getting the green colored chocolate ganache to run well, but hey—at least we tried! Haha. 

The most important thing is that he enjoyed it. His theme last year was from the Disney’s Lion Guard, however, his appetite for cartoons has changed drastically so I’m thinking of doing more of a PJ Masks theme.

I’m also thinking about taking another crack at the cake, but of course I have to step things up this year. We’ll just have to see how it all works out.

Now for this hummus. I’ve been a fan of hummus since eating Sabras hummus, especially the spicy pepper flavor.

Oh my gosh—-just think about dipping a nicely crisp cracker into a tub of this stuff and going crazy until the entire thing is finished. Sorry, ya’ll. I can get a bit carried away with food. Haha.

Seriously, I love humus for the most part and interestingly enough, I’ve gotten my little guy to like it too. YES. He’s such a picky eater so this is a HUGE deal! Any Mamas can relate?

But, the real greatness is in making my own homemade hummus, which is that much more delicious. Plus, you have more control over the ingredients used and you can always adjust based on your preference. Win, win, right?

SO WHY TAHINI?

This Avocado Hummus with Peppers + Pine Nuts recipe is super easy, quick, and as always—able to be substituted when it comes to specific ingredients.

Oh and let’s talk a bit more about Tahini. OK, so when I first made hummus from scratch (about a year ago), I didn’t use Tahini because I didn’t have it, and my hummus was OK but not great.

Unfortunately, it was really really thick and a bit grainy (I mean it is pureed chickpea). However, using Tahini in this recipe made a WORLD of a difference and it was so creamy. Yum! But in case you weren’t aware—-Tahini is made form sesame seeds.

Tahini is a great source of Phosphorous, lecithin (a fatty substance in animal tissues + plants), magnesium, potassium, and iron.

Luckily, if you aren’t a fan of using Tahini (or you just don’t have it), then you’re able to substitute it with sesame oil, which works well.

To start, add chickpeas, tahini paste, sea salt, lemon juice, olive oil, and garlic cloves to a food processor and process until smooth.

Next, add in 2 Tbsps of water, avocados, red pepper flakes, dried parsley, and a pinch of smoked paprika, and process again until smooth and creamy.

To serve, add hummus mixture to a bowl, make a medium-sized well in the middle and add finely diced bell peppers and sprinkle pine nuts. Drizzle lightly with olive oil and wallah! Enjoy with flat bread or your favorite crackers!

Ingredients

  • 1 (15 oz.) can chickpea, drained + rinsed
  • 4 Tbsps tahini paste (You can also use Sesame Oil instead!)
  • 3-4 Tbsps juice of a lemon
  • 2 Tbsps extra virgin olive oil + 1 Tbsp!
  • 2 garlic cloves, peeled + minced
  • pinch of sea salt
  • 2 medium avocados, peeled + cored
  • pinch of smoked paprika
  • 1 tsp dried parsley
  • 1 tsp red pepper flakes
  • 2 Tbsps fresh water
  • 1 medium bell pepper, finely diced
  • handful of pine nuts
  • Flat bread or crackers

Instructions

STORAGE: Leftovers are best stored in an air-tight container in the refrigerator for up to 3 days.
