SPICED MAPLE WALNUTS:

  • 1 cup halved walnuts, roughly chopped
  • 3 Tbsps pure maple syrup
  • 1 tablespoon water
  • ½ teaspoon smoked paprika

  • ¼ teaspoon ground allspice

Bring to a slight boil, then reduce heat to low to allow everything to simmer as you continue to stir, about 2-3 minutes. Remove from heat once walnuts become glaze-like and sticky.

TO MAKE THE SHAVED BRUSSELS SPROUTS:

  • Start by washing the Brussels Sprouts with cold water and white vinegar and pat dry. Then trim the woody ends and remove damaged outer leaves. For best results, use a sharp chef’s knife to slice them in half lengthwise, then thinly slice them crosswise. NOTE: Alternatively, you can use a food processor with a slicing disc for speed, or a mandoline for precision. 

ASSEMBLE THE SALAD:

  • In a large serving plate or salad bowl, add the shaved Brussels Sprouts + your fave greens (mixing them together) followed by the sliced apples, roasted butternut squash, spiced maple walnuts, croutons, and parmesan shavings.
