There’s no better way to continue the Fall season than with something completely full of Apple-Cinnamon flavor. Sweetly made with a warm and fluffy dough that easily pulls apart, leaving you wanting more soft goodness after every pull. This vegan Apple Cinnamon Crumble Pull Apart Bread is topped with a slightly crunchy crumble that adds a nice bit of texture and sweetness from the cinnamon and brown sugar and is a great play on the classic Apple Crumble Pie. This is the perfect sweet treat to enjoy after dinner or for a midnight snack.
To start the week off, I decided to delve full fledge into my continued Fall season baking. I was so happy to have made something using Apples since I do love them and it’s definitely a favorite in my house. I’m not usually a cake or cupcake lover (I’ll still eat them of course!), so I decided to make a type of bread. Previously, I’ve made Cinnamon Maple Syrup Monkey Bread and Maple Syrup + Bacon Monkey Bread, which were a success, so I felt that this one would be a great way to put a spin on things. Apple Crumble cake was requested by a few of my readers, therefore, I wanted to add a nice twist to things and HERE WE ARE! Just like Monkey bread, this recipe is easily pulled apart with every touch and is super fluffy! Trust me, you won’t know how to keep yourself away from pulling off another piece! I’m guilty! Haha.
Overall, this recipe is easy and although there are many parts to it’s execution, it won’t leave you stumped or wondering what’s next. If you’re anything like me, then you’ll be prepping in between “takes ” and “mixes” and you’ll be finished with everything in no time. If you don’t work this way, then that’s fine too! There’s nothing that a little glass of wine (OR your favorite beverage of choice!) and some music can’t fix as you take your time through it all. It’s all in fun!
Anyway, as shown below, you first make your dough and let it rise for just a few minutes (10 to be exact!). Once it has sat for that time, simply roll it out, creating a large rectangle. Just as a side note—– I am so happy to have finally gotten my marble rolling pin (about 2 weeks ago!) because I previously used my cylinder glass storage containers as rolling pins. Haha! I know. The struggle! But I had to improvise and I wasn’t letting one little baking gadget (or the lack thereof) stop me! Just thought I’d share! So, if you have to improvise as well, then do so boldly and happily! It’s all about the finish product, not the process!
Once it’s a large rectangle and evenly rolled out, lightly dress your dough with melted vegan butter and then add your cinnamon-brown sugar mixture generously. Top with your thinly sliced apples and wallah! You’ll get the above masterpiece! Then the rest is history, Ya’ll! ***See the entire recipe below***
Apple Cinnamon Crumble Pull Apart Bread
- 3 cups organic all purpose baking flour (I used Bob Red Mills)
- 1 1/4 cups coconut milk (plus 2 Tbsps)
- 1 packet rapid yeast
- 1/2 tsp sea salt
- 3/4 cups organic brown sugar (I used the Sugar in the Raw brand)
- 2 Tbsps vegan butter, melted
- 3 Tbsps vegan butter
- 3 granny smith apples, thinly sliced
- 3/4 cups organic brown sugar
- 2 1/2 tsp cinnamon
- 1 tsp ground ginger
- 1 1/2 cups powdered sugar
- 2-3 Tbsps water
- 2 Tbsps rolled oats
- 2 Tbsps organic all purpose baking flour
- 2 Tbsps vegan butter, melted
- 2 Tbsps organic brown sugar
- 2 tsps cinnamon
To Make Dough:
Heat 1/4 cup of coconut by putting it in a small pot on low heat or the microwave in 15 second increments until WARM, not hot. Add yeast and set aside until it begins to foam a bit.
Mix all dry ingredients for the dough and combine yeast, melted butter and remaining coconut milk (warm as well).
Mix ingredients using an electric mixer for 5 minutes and let your dough sit for a bit to slightly begin rising.
In the meantime, wash, peel and core apples. Thinly slice apples into small bite size bits and set aside until needed.
Remove dough from mixer and placed a floured surface. With greased (or lightly coated with flour) hands, gently press out dough to form a large rectangle.
Lightly coat dough with melted vegan butter, then mix together the cinnamon and brown sugar and evenly sprinkle over entire dough. Slice dough into 6 equal rows lengthwise (right to left) and 4 equal columns width wise (top to bottom).
Add apple bits over entire dough in a single layer (as pictured above) and set aside any extras that may be left over.
Carefully move each square into a 9 x 5 inch loaf pan, stacking one upon another. For the last row of dough, make sure the filling side is facing down so that the top of your bread is "bare". Lightly dress with vegan melted butter and sprinkle with remaining cinnamon-brown sugar mixture atop of bread.
Cover with plastic wrap and allow to rise in a warm area for 20 minutes. (do not allow dough to double in size or risk collapse during baking!).
Bake at 375 degrees Fahrenheit for 30-35 minutes or until top turns golden brown and the middle of the bread is fully cooked through.
For the Crumble:
Mix together all ingredients in a small bowl and generously sprinkle atop bread during the bread's last 10 minutes.
Remove from the oven and allow to sit in the pan to cool for about 10 minutes before removing to fully cool on a wire rack.
For the Glaze:
Whisk together powdered sugar and water in a small bowl until desired consistency is reached. **Feel free to add more powdered sugar OR water as needed**
Once bread is fully cooled, add glaze to the top and Bon Appetite!
Apple Cinnamon Crumble Pull Apart Bread can be stored in the refrigerator for 3 days for optimal taste! ***Simply reheat slices as you eat***
